Endless Simmer The Ultimate Strawberry Lemonade One of the first times I ever realized that – HEY! I can cook for myself! – was when I first learned to make lemonade. I magically found the refrigerated lemon juice at our house and followed the directions to make my own lemonade. I stirred and stirred and stirred again until that sugar was finally dissolved. Sorry for the detour. Anyway, there was a summer there where I made my own lemonade every single day, making sure to rub it in my sister’s face that I knew how to and she didn’t. The key to this being the ultimate lemonade is that you blend it up with the lemon rind in there. And any time of day for that matter. (makes 2 pint-glass servings with ice) 3/4 cup sugar2 large lemons, microwaved for 30 seconds2 cups water1 cup of frozen strawberries, microwaved for 1 minute (you could use fresh, but I think the frozen works better here) In a blender squeeze the lemons and add the rest of the lemon, rind and all. Now if that doesn’t say summer, I don’t know what does.

Kalyn's Kitchen Tartelette Hello Summer! Yep, our Spring is already over here in South Carolina. Was nice to have it for about three weeks. With the gorgeous produce falling out of farm stands everywhere, rhubarb and strawberries have been among my top choices for first lately. It's been a while that I have had in my head to make concoct a drink with both fruits. Later in the afternoon I gathered some drinks, some cookies and headed outside with the husband. This drink is a great base to add a little seltzer water or ginger ale to have a little fizz going on. Rhubarb And Strawberry Lemonade: Makes enough to fill a large carafe (sorry I did not measure. Ingredients:3 1/2 cups water1 pound rhubarb, cut into roughly 1-inch dices1/3 cup honey or agave (which is what I used)zest of 2 lemons3 cups of strawberries, halved1 1/2 cups freshly squeezed lemon juice Directions:In a large pot, bring the water to a boil along with the rhubarb, honey or agave and lemon zest.

Popsicles! | Bounteous 90 degree days have arrived and it has been MISERABLE in my house. We have a window AC unit but need to repair the broken, lead-paint covered windows in the bedroom and dining room before we can use it. The window has been ordered and deposit paid to the contractor. Some friends of ours who somehow survived living in Arizona without air conditioning had a genius suggestion: homemade popsicles! Strawberry-Kiwi Courtesy of Fine Cooking’s amazing make-your-own-ice pop recipe generator Makes 8-10 popsicles 1/2 cup granulated sugar Pinch salt About 10 kiwis (or 1.5 pounds) 1 cup strawberries, sliced or quartered or whatever Make a simple syrup: mix the sugar, salt and a half cup of water in a saucepan and bring to a boil. While simple syrup is cooling, peel kiwis and puree flesh with a food processor. Combine kiwi puree, strawberries and simple syrup. Strawberry-Rhubarb Pie Makes 3-5 popsicles (can be doubled) Peel the lemon with a vegetable peeler, carefully avoiding the pith. Stay cool!
