Coconut Cupcakes. UPDATE: I wrote this entry when I was the only one who had tasted the cupcakes.

Coconut Cupcakes

The concensus from the wing-nighters is that these are the BEST cupcakes so far! One wing-nighter had this to say: "Awesome! Awesome! Awesome! " :D If that's not proof enough that this is a winning recipe, I dunno what you want... a sacrificial lamb? Strawberry cupcakes won the poll... but as you can see this post isn't about strawberry cupcakes. On the other hand, if you voted for coconut cupcakes, feel free to direct all your exuberant exclamations to ME!

Can you smell that yummy toasted coconut?? My favorite step... ...Creaming the butter and sugar until FLUFFY! After the last addition of flour, I like to finish mixing by hand. The recipe says to fill the cups to the top. The cupcakes I did not fill all the way to the top came out looking nice. The full cups overflowed a bit and looked like mushrooms.

Ohhhhh yeah...... I urge you to add this to your "to-bake" list. Preheat the oven to 325 degrees F. Cinnamon Buns with Cream Cheese Frosting. I just finished devouring a cinnamon bun hot from the oven.

Cinnamon Buns with Cream Cheese Frosting

A swirl of soft dough, oozing with buttery brown sugar and cinnamon and thickly gobbed with cream cheese frosting. Actually, for the sake of truthfulness, I just finished devouring two. Oops. (Don’t worry – I ate a carrot straight after to make up for it). This is what I do when I am supposed to be studying “Advanced Topics in Clinical Nutrition”. This recipe is from Molly Wizenberg, written for Bon Appetit magazine.

I confess that Butterbeer Cupcakes aren't actually mentioned in the Harry Potter series. In my defense, if JK Rowling had been given one of these while writing the books, she would have found a way to fit them in. They are so exceptional, I wouldn't be surprised if she featured them as a major plot point. I'm only half joking. Humor aside, the release of the final movie is upon us. Yet, as I keep reminding myself, this isn't really goodbye. My collection of Harry Potter books isn't going anywhere.

I don't know about you, but I can always use the comfort of an old friend. These Butterbeer Cupcakes are easily on my list of the top three cupcakes of all time (if you put another one in front of me, I just may declare these the winner). You need to make these.
