Natural health advocates are deeply concerned about which foods are safe to buy due to possible contamination. Researchers at Texas Tech have shown the validity of such concerns with the finding of evidence of antibiotics, one of which is a suspected human carcinogen, in seafood which is imported into the United States and purchased from grocery store shelves. Researchers at Texas Tech found evidence of this contamination after testing farm-raised shrimp samples of international origin for ABC’s “World News with Diane Sawyer.”

Ron Kendall, who is director of The Institute of Environmental and Human Health (TIEHH) at Texas Tech, has said researchers tested only the muscle tissues which are consumed by people. They discovered that about 10 percent of the 30 samples tested contained evidence of three antibiotics. The news outlet tested 30 imported shrimp samples from grocery stores across the country and found three were positive for antibiotics that are banned in the United States. Though the sample size was small, the fact that 10 percent were found to contain illegal drugs is significant considering Americans annually eat 1 billion pounds of shrimp, 90 percent of which is imported from halfway across the world — mostly from Thailand, Indonesia, Ecuador, and China. The U.S. Food and Drug Administration physically inspects less than two percent of imported seafood shipments and even smaller percentage are sampled for drug residue testing.

Even though they are frequently used on shrimp farms, information related to residues of oxytetracycline and enrofloxacin in Litopenaeus vannamei tissue is very scarce. In an unpublished study performed at the Research Center for Food and Development, Hermosillo, Sonora, México, they administered a diet medicated with enrofloxacin at a level of 200 mg kg-1 for 14 days in an attempt to determine the accumulation and elimination of enrofloxacin and its metabolite ciprofloxacin in a crop of Litopenaeus vannamei.

Subsequently, a diet without the antibiotic was administered for 16 days. The study was carried out under controlled laboratory conditions and on a farm. La présence de chloramphénicol dans les aliments constitue un risque potentiel pour la santé humaine. Il s'agit d'un antibiotique puissant à spectre large, dont l'UE a interdit l'utilisation chez les animaux producteurs d'aliments depuis 1994.
