Chunky Monkey “Ice Cream” Bon Bons. Who’s in the mood for a frosty, nutty, chocolatey treat? By merging together two of my favorite recipes—The Kitchn’s One Ingredient Ice Cream and Irvin Lin’s homemade Magic Shell—I came up with this simple, bite-sized confection. The steps are easy, but timing is key. You must wait for the “ice cream” to freeze completely (twice!) Before proceeding, and then you gotta work fast. Otherwise, you’ll end up with melty brown lumps. Six Ingredients + Patience = Happy Little Monkeys. Here’s what to gather to make 24 bite-sized Bon Bons: 3 medium ripe bananas, frozen and cut into 1-inch pieces1 teaspoon vanilla extract7 ounces dark chocolate (70% cacao or higher), finely chopped¼ cup coconut oilPinch of salt3 tablespoons almonds or walnuts, toasted and finely chopped (Chunky Monkey ice cream typically contains walnuts, but I prefer almonds) Here’s what you do: First things first: you gotta make your banana ice cream.

Toss the frozen banana chunks and vanilla into a blender or food processor… Banana Ice Cream with Chocolate Shell | Stupid Easy Paleo. Truthfully, I’m not the paleo dessert girl. It’s not that I’m anti-dessert…well, let’s just say that it leads me down the path of too many sweets most of the time. I really wish I did paleo desserts often on the blog because, let’s face it, I’d be far more popular. But alas, sticking to what I know is what I tend to do. This is so easy it should be illegal, and it’s perfect for making in tiny batches when you want just a bit of a sweet treat. This reminds me of summers as a kid when my family would walk to the neighborhood soft-serve place…we’d get big cones and always get chocolate “dip”–the crunchy shell that you’d have to race to eat or else the ice cream would come melting out from all sides.

I think I've stumbled on a delightful treat with no sugar necessary - or maybe that's just my detoxed taste buds talking. I was inspired by Paleo By Diana's Balanced Apple Pecan Bites and Elana's Pantry's Paleo Coconut Macaroons. I wanted to create a nut-free treat as I limit my nut consumption (more on that later), so macaroons came to mind and green apples seemed like the perfect solution to sweeten them up. LaraBars were on sale the other day. I hadn’t eaten one of those things in years, so I bought a few. Chocolate Chip Cookie Dough, amongst other flavors. Besides the fact that the bar was about the length of my pinky finger, the flavor was so amazingly disappointing. It tasted so “healthy”…and nothing like the cookie dough flavor Lara promised. Bleh. So I figured I could make my own version of the Chocolate Chip Cookie Dough Lara Bar, switching out the mass of nuts & dates for coconut butter. Yield: Six 2½ inch cookies + scraps 1 (7 oz) package Unsweetened Let’s Do Organic Creamed Coconut*1/3 cup coconut sugar2 teaspoons vanilla extract1/8 teaspoon salt1/3 cup chocolate chips In a small sauce pot, combine creamed coconut, sugar, vanilla and salt over medium heat. Get out an 8×8 baking dish. Place in the refrigerator to cool and then use a cookie cutter, or a knife, to cut into desired shapes.

Thick and Creamy Coconut Milk Hot Chocolate. Since winter hit, all I have been wanting is warming and filling foods. It makes sense seeing as its way too cold for Texas right now. Im not whining Im just saying. Its cold. But the thing that beats any cold weather is a nice cup of thick, decadent, dark chocolaty hot chocolate. Hot chocolate is always an iconic and simple thing that is done on winter days but a lot of people do it where the hot chocolate is all runny and liquidy and I do not like it like that. I like it when its so thick that the last little bit sticks to the bottom of the cup like syrup. I’m telling you, drinking this is like drinking a cup of warm melted chocolate. Chocolate has always and always will be a very important part of my life. Its easy to get fairly good chocolate if its organic or fair trade because typically it is made using minimal ingredients and is made with care and properly. Chocolate Chip Cookies. Something that has always beckoned me to the kitchen while my mom was cooking as a kid was the sweet and buttery aroma combined with rich espresso scented melted chocolate known as chocolate chip cookies. As most people I only remember bits and pieces of my childhood but one significant thing that I remember is just that. The rolling thump of my heartbeat increasing with excitement as she pulled out the steaming fresh masses of soft and chewy dough with oozing chunks dark chocolate.

It’s actually quite an exotic feeling that I get whenever I inhale the scent of fresh baked chocolate chip cookies. It’s the only type of fresh baked good that really causes it for me, but it’s sort of a jump in your heart after filling your lungs with it’s alluring aroma that brightens everything up. A lot of the time I actually helped my mom bake chocolate chip cookies as we licked the batter and played around in the kitchen. Come on now, don’t act like I’m the only one guilty of that.
