Breakfast Pockets

They are one of my favorite make ahead breakfast ideas. Not only do they have an entire meal stuffed into a portable pouch but they also made me a bread maker. Not a “bread maker” but a maker of bread. A bread maker just makes me think of the appliance. Which I need to buy, by the way. Pizza Snowballs (A Pizza Pocket Recipe Kids Can Make) – And a Post-Vacation Menu Plan

Before we left, we had our final picnic supper for baseball season, and the unanimously requested repeat meal was Pizza Pockets! Spaghetti and Meatball Pot Pie. Remember those meatballs I made for a “special idea” on Friday?

Spaghetti and Meatball Pot Pie

Here is that idea, Spaghetti and Meatball Pot Pie. I took the concept and figured if pizza was a good pot pie, then spaghetti and meat balls would be too. This isn't as much a recipe as it is a process. I started by greasing the inside of ramekins (1 cup sized, 3 1/2” in diameter). Then I put in a mix of white and mild cheddar cheese.

Guinness® BBQ Sauce. Slammin' Salmon. As I mentioned yesterday, I planked some salmon tonight for dinner.

Slammin' Salmon

I used the Asian Barbecue Glaze and it was incredible, if I do say so myself. In fact, it was so good that I've decided to go with the title you see above rather than the "Asian Barbecued Salmon" title that I had originally planned. The old title somehow seems more than a little lacking now. Of course cedar planks and salmon are made for each other; that's certainly no secret. However, the addition of the glaze takes things to a much higher level. Steak au Poivre.

This meal was inspired by a recent post at The Pioneer Woman.

Steak au Poivre

Ree prepared an incredible-looking Filet au Poivre that really got to me. I knew almost instantly that it was something that I just had to try. In short, steak au poivre is a simple steak that is seared, finished in an oven, then served with an incredible pan sauce made from the fond (the tasty brown bits stuck to the bottom of the pan), stock, cognac, and butter. While I was getting ready to make this I remembered a great cookbook that I don't use nearly often enough -- Anthony Bourdain's Les Halles Cookbook. Based purely on the French-ness of the recipe I thought that he would almost certainly include a recipe for this dish. Ree's recipe sounded great, but so did Bourdain's. Cuban Rueben. What does a guy do when he has a mess of pulled pork, a hankerin' fora Cuban sandwich, but also loves a Rueben?

Cuban Rueben

He makes a Cuban Rueben! A classic Cubano sandwich is roasted pork, ham, Swiss cheese, dill pickles, and mustard on Cuban bread. It is then press-grilled to gooey deliciousness. My version is adds a Rueben twist by replacing the pickles with sauerkraut. Since I don't have access to Cuban bread, I use a par-baked French baguette. Ingredients1 Bake-at-home French baguette3/4 cup Barbecued pulled pork (or roasted pork), warmed1/2 cup Sauerkraut, drained very well1/8 lb Deli ham, sliced to sandwich thickness4 slices Swiss cheese, sliced to sandwich thickness3 tsp Honey mustard1 tsp Plain yellow mustard. Cheater Pulled Pork.

If you like pulled pork, but are lazy or just pressed for time, here is a great solution.

Cheater Pulled Pork

Pulled pork these days is usually made from a pork "butt", which can also be called a "Boston butt", or a "shoulder blade roast". For those of you lacking in the area of porcine anatomy, the "butt" part has nothing to do with the south end of a hog. It's actually the larger, or "butt" end of the shoulder (separated from the "picnic" end). Yes, it's confusing, but you can apparently thank the Brits for that. Cheater French Onion Soup. I am a fool for some good French onion soup. Unfortunately, most of the common restaurant fare is thin, salty and vacuous. BBQ Chicken Fettucine. Barbequed chicken, pasta, and a smoky creamy cheese sauce, what's not to like about that? This is a great answer to the question, "What in the world can I do with all this leftover barbequed/grilled chicken?! ". I whipped this up with some simple smoke-grilled chicken breasts, but I think smoked chicken would be better.

Shoot, you could even do this with one of those grocery store rotisserie chickens. As always, click an image to see the larger version. Top 10 Skills to Master Your Grill. @jonny6pak: AFAIC, marinades are NEVER the way to go. I've never had a piece of meat that was somehow made better by soaking it in something. A brine will help tenderize and will flavorize to the extent that you like salt (and yes is much better than any marinade I've had), but honestly, I think a good homemade rub is all you need 99.9% of the time.

I rub chicken, pork, and beef with consistently good results. I also coat the outside of beef and pork with olive oil to help with searing. The only meat that gets anything wet at all is ground beef, which gets egg white and Worcestershire (along with oatmeal, cheese (grated or sometimes stuffed with blue cheese), (usually) onion flakes, salt and spices—and a coating of olive oil). Mozzarella-Stuffed Turkey Burgers -EW. Grilled?Avocados. Avocados have been a mainstay of my culinary life for about as long as I can remember.

Growing up in Southern California in the 60's, avocados were locally grown, plentiful and part of just about every party and celebration, usually in the form of guacamole. But all that changed and guacamole became the springboard for a host of dishes, sweet and savory, but for me, nothing beats a plain slice of perfectly ripe avocado. It really needs nothing to enhance its lusciousness, but then.... The other day as I was listening to one of my food podcasts, Evan Kleiman was interviewing an avocado grower who mentioned that one of his favorite ways to eat avocados is to grill them.
