Traditional Soft, Fluffy Challah for Shabbat - With Creamy Spinach Dip - Kosher Recipes & Cooking. Are you baking challah for Shabbat? With Pesach over, you have a couple of days to stock up on flour and yeast, pull out your mixing bowls and turn out some braided loaves of soft, pillowy goodness. Trust me, it’s well worthwhile! (And I say that having made it four days before (!) Pesach, after a series of mini–kitchen disasters.) Sick of cooking? Choose a very large bowl. Pour 2 cups of warm water into the bowl and sprinkle the yeast on top, with 2 tbsp. sugar. Add the rest of the warm water, oil, honey, eggs and salt. Cover the bowl with plastic wrap or a damp towel and put it in a warm place to rise for about an hour and a half.

You can see from my pictures that my bowl was not large enough, so after making the dough I transferred it to a large disposable pan to rise. Punch the dough down and let it rest for 10 minutes before doing the mitzvah of separating challah. Now divide the dough into six relatively equal pieces. Ready to start? Making challah rolls is a bit simpler. Grilled Eggplant Sandwich Recipe. Print Photography Credit: Elise Bauer I have a confession to make.

I don’t much care for those big globe eggplants. I have tried to like them, truly I have, but I think it’s a texture thing. They just taste squishy to me. If squishy is a taste. This grilled eggplant burger or sandwich is one of those hits. Here’s the problem with globe eggplants. So consider this a sort of Mediterranean veggie burger: Grilled eggplant, a little marinated red onion and tomatoes, fresh mozzarella – and of course some fresh basil on top. This recipe calls for using a grill, but you could just as easily lay the eggplant slices on a broiling pan (pan rubbed first with some vegetable oil) and broil the slices a few minutes on each side. Ingredients MethodHide Photos 1 Line a large tray with paper towels. 2 Cut the tomato into 1/4 inch thick slices. 3 Prepare your grill for high, direct heat. 4 Once the eggplant slices have been sitting for at least 15 minutes, pat them dry with more paper towels.

Hello! Croque Monsieur Ham and Cheese Sandwich Recipe. Method 1 Preheat oven to 400°F. 2 Make the béchamel sauce. Melt butter in a small saucepan on medium/low heat until it just starts to bubble. Add the flour and cook, stirring until smooth, about 2 minutes. 3 Lay out the bread slices on a baking sheet and toast them in the oven, a few minutes each side, until lightly toasted. (Alternatively, you can assemble the sandwiches as follows in step four and grill them on a skillet, finishing them in the broiler with the bechamel sauce.) 4 Lightly brush half of the toasted slices with mustard. 5 Spoon on the béchamel sauce to the tops of the sandwiches.

If you top this sandwich with a fried egg it becomes a Croque Madame. Hello! Blue Cheese Burgers Recipe. Print Photography Credit: Elise Bauer Have you ever made a cheese-stuffed burger? The most common method is to put a mound of cheese between two ultra-thin hamburger patties and pinch the sides. The downside to this approach is that if you haven’t sufficiently sealed the edges of the burgers, all the melted cheese leaks out when you cook them. So, when my pal Garrett described a way for making blue cheese burgers that mixed the cheese in with the burgers, I was all ears. Garrett calls the burgers “Sassy” and sassy they are indeed. Here's a tip, although you might be tempted to go with extra lean hamburger meat for this burger, given all the cheese, I don't recommend it, unless you want blue cheese flavored dry burgers. Ingredients 1 pound ground beef (16-20%)1 Tbsp Dijon mustard2 cloves minced garlic2 green onions, chopped1/2 cup (about 2 ounces) crumbled blue cheese1 egg1 Tbsp waterSalt and freshly ground black pepper MethodHide Photos Serve on hamburger buns with lettuce and mayonnaise.

BLT Recipe, Smoked Bacon BLT with Arugula. Method 1 Cook the bacon: Heat a large sauté pan or cast iron pan on medium low heat. Lay the strips of bacon in a single layer on the pan. Slowly cook the bacon, rendering out the fat, until lightly browned on one side. Using a fork or tongs, turn the strips of bacon over to cook the other side. When the bacon strips are sufficiently cooked remove from pan and place on a plate lined with a paper towel to absorb the excess fat.

Pour out excess fat from the pan (leaving about half a teaspoon in the pan) into a jar or a container to either dispose of or to store. (Never pour bacon grease down the sink, it will clog your pipes.) 2 Wilt the arugula: In the same pan, add handfuls of fresh baby arugula or watercress. 3 Toast bread, build sandwich: Toast bread slices in a toaster. Eat immediately. Hello! Avocado Chicken Salad Recipe. Print Photography Credit: Elise Bauer The concept is simple—a quick, basic chicken salad that uses mashed avocado as a binder instead of the more traditional mayonnaise. That was my idea as I set out to repeat the success we had with our Avocado Tuna Salad. It would be a “sequel” of sorts, hopefully a sequel more like Toy Story 2 (brilliant!) Nailed it! The unexpected ingredient in this chicken salad is chopped apple. Avocado replaces the fat of the mayonnaise, but not the seasoning. Ingredients 1 cup finely chopped cooked chicken1 ripe avocado, seeded and peeled (see How to Cut and Peel an Avocado)1 apple, peeled, cored, and finely chopped1/4 cup finely chopped celery1/4 cup finely chopped red onion2 Tbsp finely chopped cilantro or parsley2 teaspoons lime juice or a tablespoon of lemon juice1/2 teaspoon kosher saltPinch of freshly ground black pepperSandwich bread or salad greens MethodHide Photos 1 Place the chicken, avocado, apple, celery, and red onion in a medium bowl.

Hello! Apple Peanut Butter Sandwich Recipe. Print Photography Credit: Elise Bauer “What? You’ve never eaten an apple peanut butter sandwich?!” Declared my young friend Aldie (11) upon hearing that no, I had not, and indeed somehow that rite of childhood had passed me by. “They’re so easy! And good. For those of us who might have any lingering doubts as to how truly easy this sandwich is to make, Alden has prepared a short video on exactly how to make one.

One apple will yield enough apple slices for 2 to 4 sandwiches, depending on the size of the apple and the size of the bread. Ingredients ApplePeanut ButterSliced Bread Method 1 Quarter, core, and slice the apple into thin slices. 2 Spread peanut butter over one slice of bread, going all the way to the edges. 3 Place apple slices over the peanut butter in a single layer. Hello! Egg Salad Sandwich Recipe. Print Photography Credit: Elise Bauer An egg salad sandwich is one of the easiest sandwiches in the world to make, especially if you have some hard boiled eggs already made. Add little chopped celery for crunch, some green onions or chives for the green factor, a dash of salt and pepper for seasoning, and a spoonful of mayonnaise to bind everything together. Easy! There is one more ingredient that will give your simple egg salad a special zing, and that is a dash of curry powder.

To mayo or not to mayo? Updated from the recipe archive. This recipe is for a one egg sandwich. Method Hello! Chipotle Crusted Pork Tenderloin Recipe. Lime Chicken Soft Tacos Recipe. Spaghetti with Mascarpone, Meyer Lemon, Spinach, and Hazelnuts Recipes from The Kitchn. We had two encounters with mascarpone cheese in pasta recently. One was seeing this Tagliatelle with Spinach, Mascarpone, and Parmesan over on Jamie Oliver's website. The other was catching the tail end of a British cooking show where the host was making mascarpone-lemon spaghetti.

(We're sensing an English theme.) This is our version, which borrows a bit from both but has the bright flavor of Meyer lemon plus toasted hazelnuts, which turned out to be the best ingredient of all... Mascarpone is a soft, scoopable, sweet cheese. Not sugar sweet, but mild and milky with just the tiniest bit of tang. The hazelnuts were a last-minute addition. We didn't bother pre-cooking the spinach. Tester's NotesEver since Elizabeth shared this recipe a few years ago, I've been dying to try it.
