On our last trip to Jordan I asked our guide, Ahmed if he liked camel’s milk but he looked at me askance and said that he never drank it. Then I ask him about his favorite meal and he immediately said Maklouba, a rice and meat casserole popular in the Middle East. His favorite version was with cauliflower (which he called white flower) but it is also made with fried eggplant slices and other seasonal vegetables. I knew he had to be Palestinian because Maklouba, which means to turn upside down, is very popular both with them and the Arab Israelis. Later on I asked Ali, another Jordanian guide, what he thought about camel’s milk and he couldn’t stop talking about its virtues.

Abstract The main objective of this study was to compare the effects of consumption of mozzarella cheese of buffalo and cow milks by biochemical and biological evaluation methods.

Forty male rats were divided into four groups: Control Group (CG), with casein-based rations; Buffalo Milk Mozzarella Cheese Group (GQB) with buffalo milk mozzarella cheese based rations, the Cow Milk Mozzarella Cheese Group (GQV), with cow milk mozzarella cheese based rations and the aproteic group (GA). All groups had ad libitum access to water and food. One-way analysis of variance (p≤0.05) level and Scheffe test were performed. Net Protein Retention (NPR) of GQB was similar to the GC and lower than GQV. Protein Efficient Ratio (PER) and Food Efficacy Coefficient (CEA) showed no differences for GQB, GQV and GC.
