Even if you’re not familiar with it by name, you’ve almost certainly tasted it before; it’s the reddish pork that appears in little pieces in every Special Fried Rice in every Chinese restaurant and takeaway in the country, in those wonderful fluffy buns you get as dim sum ( my recipe for those buns is here ), on its own over rice as a roast meat, and sliced thickly in a million different noodle dishes. It’s a sweetly glazed, aromatically spiced, perfectly delicious piece of meat, and one of my very favourite things to do with pork. This recipe makes a single fillet of char siu.

Pork and Ginger Pot Stickers Recipe :

Ingredients 2 cups chopped napa cabbage 1/2 tablespoon salt 1/2 pound ground pork (Don't get lean pork, the fat is good for juicy and flavorful dumplings) 2 tablespoons minced ginger 1 1/2 tablespoons minced garlic 2 tablespoons thin soy sauce 3 tablespoons sesame oil 1 egg 1 to 2 cups chicken stock or water Directions Sprinkle cabbage with the 1/2 tablespoon of salt and let stand for 30 minutes. Place the cabbage on a clean dishtowel or cheesecloth and squeeze out any water. Ingredients for wheat starch dough: (32 wrappers) 1 1/4 cups (150 g) wheat starch 1/4 cup (30 g) tapioca flour/starch or wheat starch 1 cup (240 cc) boiling hot chicken broth 1/4 teaspoon salt 1 teaspoon vegetable oil Directions: In a bowl, mix all the dry ingredients for the dough. With wooden chopsticks, stir in the boiling hot chicken broth and the vegetable oil. Sprinkle wheat starch over a wooden cutting board or other appropriate kneading surface.

Jun 25, 2008 The kids at home loves eating pork and I think it runs in the family and I think my kids have the gene from my family side. All of us are meat eaters and I trying to cut down on meat and have more green vegs. The padeatrician advised me to give Ee-Thern more fat meat i.e : fatty pork, chicken skin, fish skin or fish oil… cos he is still underweight although he ate a lot everyday. At the age of 3 yrs old he still looks like a baby to me and he has baby face just like Dearie Suki. I make my own version of Steamed Siew Mai for breakfast one of the weekend and my kids love it and Dearie Suki love it too.
