The place that started it all was a local Chinese buffet here in Michigan. After frequent visits to the buffet over the years, I finally decided to take a stab at cooking my own Chinese dishes at home. The majority of the dishes were delicious and I began cooking different Chinese meals every week, but I had always wanted more variety just like the buffet. I had always wondered, “what if I could create a Chinese buffet at home?” I have wanted to do this for along time so I was very excited when I was chosen to be part of the 24,24,24 event presented by Foodbuzz. Shrimp Siu Mai. I am a huge fan of Dim Sum.

Not just Chinese style Dim Sum but the kinds that they have in Korea, too! I need to explore Korean Dim Sum (Mandu) recipes when it gets colder… But until then, this delicious Chinese style shrimp siu mai recipe will remain as one of my favorite homemade Dim Sum recipes. Interestingly, I’d never been to a Dim Sum restaurant until just a few weeks ago. There they brought carts full of different types of Dim Sum to our table, asking if we wanted any. It was really interesting because I’d never experienced anything like it at a restaurant. I absolutely love homemade wontons and I was so excited to try and make one of my favorite Dim Sum using only shrimp. I used large tiger prawns for this recipe, about 12 of them.

Add finely chopped chives (about 1 tablespoonful) and finely chopped seeded red pepper to the shrimp mixture. Wrap the wontons in the way shown in the picture above, leaving it open on top. I have wanted to make this for the longest time but have just finally got around to doing so now. Kung Pao chicken first originated in central-western China and has become very popular in the United States. This is the westernized version of kung pao chicken consisting of wok fried chicken pieces, roasted peanuts, scallions and a spicy sauce. For those of you that have been waiting for a Chinese chicken recipe that doesn’t use a deep fryer – this is it. Even though you can deep fry the chicken pieces this time we are frying the chicken in the wok. Ingredients:1lb boneless-skinless chicken breasts (cut into 1” pieces) 1 tablespoon cornstarch 2 teaspoons sesame oil 3 tablespoons green onions (chopped) 3 garlic cloves (minced) ½ teaspoon crushed red pepper flakes ½ teaspoon powdered ginger 2 tablespoons rice wine vinegar 2 tablespoons soy sauce 2 teaspoons sugar 1/3 cup dry roasted peanuts.

Back in Korea, I didn’t get to eat shrimp much. I think there was only a few different times I got to eat shrimp in Korea and most of the time, it was in soup with other seafood. So I really appreciate the variety of ways to use shrimp here in America. I am a big fan of having shrimp as main dish. Shrimp has significantly lower calories than other types of meat.

I’ve been trying to lose a few pounds lately. So I went and bought a bunch of shrimp at Costco so that I could make more dinners using shrimp. The orange sauce is sweet, citrusy with a little heat. You will need about 1 pound medium sized shrimp. Then make the orange sauce and stir with grilled shrimp in a pan, until the sauce thickens.
