Rolled Cookies 101. Hey guys!
Today I’m back with another post in my serious of – Let’s talk about – baking basics, sugar cookies! Which just so happens to be my fav cookie. Snowman Oreo Balls. Seven Layer Cookies. Cranberry Christmas Cake. A few weeks ago, my friend Valerie made this to share with friends.
The moment I tasted it, I asked for the recipe. Tart cranberries, sweet buttery cake and a fantastic texture all combined to basically beg me to eat another piece. This is an absolutely perfect cake that takes very little effort to make. No icing, no topping, nothing else is necessary at all. So it should be no surprise to you that when I saw saw these cookies online I new I had to make them. I saw this recipe on "In Katrina's Kitchen". The original recipe calls for a glaze and I really wish I did not skip it. I was in a time crunch and was not able to make it, but I really think it would have kicked it up a notch. The original recipe also suggests using sugar cookie mix. Cinnamon Roll Cookies Sugar Cookie Dough (recipe from Baked Perfection) 3 cups flour1 tsp baking powder1/2 tsp salt1 cup (2 sticks) softened butter1 1/2 cup sugar1 1/2 tsp vanilla extract1/2 almond extract2 eggs Mix together the flour, baking powder, and salt, set aside. Filling and Icing 1 tablespoon melted butter 1/4 c granulated sugar 1 tbsp. ground cinnamon 3/4 cup powdered sugar 1 tbsp. milk Divide the dough into two halves.
Preheat oven to 375 degrees Fahrenheit. Take dough out of freezer and begin cutting into 3/4 inch slices. In a small bowl, mix powdered sugar and milk until smooth. Eggnog Truffle Pops! Well, they don’t have to be pops, but personally I think things are more fun as pops and truth be told I have a weird thing about not really liking touching dipping chocolate, so I prefer the pop method when it comes to dipping things in chocolate. These are SO yummy. I made two versions – the same truffles, but one on the cute stripey straws from Sweets & Treats Boutique with fun colorful Christmas sprinkles.
Perfect for the young kiddos. I also made a fancy version that would be great for adult parties or older kids, using Maskipops By Adri’s Bling Sticks and different sanding sugars. Those bling sticks are so much fun. And these are super easy to make. This eggnog truffle recipe comes from McCormick and features one of the Seasonal Seven Flavors – Nutmeg. Like of lemons, or cinnamon, or even pine. How lovely would that be? Like rain, we'd be able to smell the snow coming. I can't believe it's already the end of the year - what a year it's been and I have so much to be grateful for.
