Peanut Butter Cup S’mores Bars

It’s my blog and I can rant when I want to. It’s kind of a rite of passage into adulthood that at some point in your grown-up years, you have a really terrible landlord. But I’ve said it once and I’ll say it again…my landlord is pretty much the WORST. Exhibit A: The other day my roommates and I got locked inside our apartment (HELLO fire hazard) because our doorknob fell off. Just a casual turn of the handle and *pop! Our landlord, right? Wrong. Luckily we have a back door and were able to escape, praise Jesus. Peanut Butter Cocoa Krispies Smores Bars. I haven’t had real, good old-fashioned smores that are made over a campfire in far too long.

Like about twenty years, give or take, but who’s counting. The last time I roasted marshmallows over a campfire was when I was a Girl Scout. I have memories of being too impatient to wait for the marshmallows to toast evenly and instead, I would intentionally dip my wooden stick, with splinter-filled marshmallows speared on it, directly into the flames. The marshmallows would ignite, char, and then I’d blow out the flaming charcoal black blobs of hot molten sugar, previously known as marshmallows. Then I’d promptly smoosh the charred marshmallows in between stale graham crackers, courtesy of the Minnesota summer humidity.

Finally, I’d set a couple jagged-edge squares of chalky, tasteless Hershey’s’ milk chocolate on top of the charred marshmallows, top it with another stale graham cracker, and bite into the gooey, charry, chalky mess and proclaim it to be the best thing I ate all summer. Slutty Brownies

I know, big statement. They’re called Slutty Brownies because they’re oh so easy, and more than a little bit filthy. They’re best served warm from the oven, with good quality vanilla ice cream (devastatingly I didn’t have any in the freezer this time, so I guess I’ll just have to make them again). They take about 45mins to make, including baking time. The ultimate comfort food, whipped up within the hour. Chocolate Chip Cookie Dough Brownies. Brownies are sort of like cheesecake, aren’t they?

There’s nothing better than the perfect dense, fudgy brownie, just like not much can beat a classic piece of creamy cheesecake. Yet with both of these desserts we’re always fiddling around with different versions, swirling things in and layering things on the top and the bottom (incidentally, peanut butter goes well with both!). It’s an endless merry go round of dessert experimentation, where there really can never be a bad result. Feel free to check out all of my brownie recipes and cheesecake recipes to see how many times I have spun around this little kitchen carousel. But like a little kid at the amusement park, you never want the ride to stop, so we keep going… which is where these amazing brownies come in. Twix Brownies. Candy bars.

Twix Brownies

I’m a bit obsessed lately, what with the Peanut Butter Snickers Cookie Bars, the Reese’s ice cream in my freezer, and now these Twix brownies. It’s an obsession I can live with! Besides the obvious fact that there’s candy bars in the middle of a luscious brownie, I think we all know that the best part of these is sneaking the little bits of chopped candy bar that happen to “stray” away from the rest of the pack. Survival of the fittest in my kitchen! Candy Bar - Cookie Bars. I really don't know why I do this to myself.

I'm determined to gain less than the typical 35-40 lbs that I normally gain during pregnancy because I'm not 25 anymore and can't lose the weight in 12 weeks by eating everything I want and doing nothing but breastfeeding. Yeah, that's how it was with my firstborn. Not anymore. Not even close. It's all because we were invited to some friends' house for dinner. Eat at allie's: Samoa M&M Blondies.
