Fresh Zucchini Salad with Lemon Vinaigrette. This looks like a green spaghetti right, is that what your thinking?

Fresh Zucchini Salad with Lemon Vinaigrette

No pasta was cooked in the making of this zucchini salad!! In fact no pasta is IN this zucchini salad, although it does looks like it though. Maybe it should have been called Zucchini pasta?? Either way it is soft, luscious and fresh with the hint of lemon throughout each bite! Now’s the time to get your fresh zucchini at any farmers market or any market for that matter. You certainly don’t need to shred the zucchini, but I find the lemon dressing really gets absorbed so well when shredded. Add some fresh parsley, basil, scallions and even a bit of creamy goat cheese sprinkled over the top if you like! To shred the zucchini I used a Pampered Chef vegetable peeler with the serrated side. You could also purchase these fabulous ones if you’re in need of some new ones! Messermeister 3-pc. Seen here topped with dried chopped cherries, slivered almonds and goat cheese! Roasted Brussels Sprouts with Leeks, Bacon & Cranberries

Even if you’re not a Brussels sprout fan on any given day, having this dish on a holiday will make you think twice about why you never enjoy these healthy little bites of green goodness more often. Combined with some mild leeks, sweetness from dried cranberries and salty, crispy bacon and your taste-buds will be doing the happy dance! Two out of three of my children love Brussels sprouts believe it or not so they happily tried this recipe, except for moving aside the leeks.

Sugar Free Lemon Coconut Macaroon recipe

I have cooked a few of other peoples Sugar Free recipes for these lovely little gluten free cookies but they are just not as satisfying as the real thing, the texture wasn’t right. I have tried many versions of my own recipe and I am finally really happy with this one, a chewy bite with lots of flavour. You will see that these have a vibrant yellow colour from the turmeric which also has a wealth of nutrient properties but will not be tasted in the recipe.
