Spicy. Crunchy. Lime-y. Savory. Creamy. Finally, a legit taco recipe that you should probably make this weekend – my Roasted Cauliflower Tacos with Spicy Avocado Lime Crema! I shared those tempeh taco boats a while back, which are delish but they’re in lettuce cups… so we don’t consider them real tacos, right? Sometimes, you just need the real deal. The versatility of cauliflower is amazing and undeniably perfect for healthy vegan (oil-free!!) Roasting bite-size cauliflower florets in a blend of taco spices, coated in almond milk makes them crispy on the outside and soft on the inside.They become crunchy and roasted to golden perfection. I hope you guys love these little beauties as much as I do.
For the tortillas, I chose mini corn tortillas I picked up at Trader Joes. Roasted Cauliflower Tacos with Avocado Lime Crema Serves 2 Ingredients Spicy Avocado Lime Crema Instructions Preheat oven to 400 degrees F. Notes Makes 6 mini tortillas. The Glowing Fridge. Verdeel de olijven over de schaaltjes. Snijd een paar schijfjes van de tomaten en snijd de rest in kwarten, verwijder enkel het binnenste harde gedeelte. Gebakken prei met feta. Bereiding.

I really enjoyed this Meatless Monday Taco Salad and find it interesting and fun when a recipe exceeds expectations. I guess anything with taco chips gets an automatic pass with me – and salsa too! Our garden tomatoes are doing great and we eat them at least twice a day. There is nothing better than homegrown tomatoes so this is another great way to enjoy them before they’re gone. Fresh corn, cooked brown rice, black beans, onion and cilantro give this taco salad plenty of fiber and fresh flavor. Topped with crushed tortilla chips, shredded cheese and diced avocado, who’s going to miss the meat? Once fall arrives, our wonderful homegrown tomatoes will slowly sneak away, and we’ll be left with bland hot house tomatoes from the grocery. Don’t get me wrong, I LOVE fall; the colors, the crisp air, pumpkins, sweaters, and camping are some of my favorite markers indicating summer is gone and winter is on the way. Just what I feel I need on someday when I need that extra bit of comfort on a plate. There a few parts to this recipe but it is really, really quick. I find myself gravitated to make this dish on the weekends, it is a great sharing dish. It is on the side of naughty but really tasty none the less. Time from start to finish: 25 minutes Serves 6 Ingredients: 200g (7 oz) sliced jalapenos in brine 200g (7 oz) cherry tomatoes 1 red onion (or 1 bunch spring onions) small handful coriander 200g (7 oz) cheddar cheese 400g can kidney beans 2 x 200g bags tortilla chips 3 perfectly ripe avocados a few drops of Tabasco (optional) 200ml (7 fl oz) sour cream ½ lime Salt and pepper Equipment: Colander, 2 small bowls, 25½ cm (10 in) square baking dish at least 6 cm (2½ in) deep. It is really a case of just bunging the shellfish into the pan, then standing back and letting the hob do the work for you. 350g/12oz dried linguine or spaghetti pasta (regular or wholewheat) 3 tbsp extra virgin olive oil, plus extra for drizzling 2 large banana shallots, finely diced 3 garlic cloves, very finely chopped 2 red chillies, seeds removed (if you like less heat) and finely chopped 400g/14oz raw, peeled tiger prawns, deveined (about 600g/1lb 5oz frozen weight) 400g/14oz clams in their shells, washed thoroughly (ideally soaked them in cold water for an hour), discard any that remain open when tapped 1 glass white wine (about 150-200ml/5-7fl oz) 1 small bunch parsley, roughly chopped (about 3 tbsp chopped) flaked sea salt and freshly ground black pepper 70g/2½oz rocket 1 small lemon, cut into 4 wedges 1. 2. 3. 4. The curry is extremely tangy, full of flavour and pretty filling, while the chilli and black pepper roti bread are kind of like naan bread - quick to make and great for dipping. Lorraine's Blog: The Mighty Tomato. 9th January 2015 Nice to see a bit of blue sky today over London today. Such a rarity of late. Yesterday it had been dark until about 9am and it was raining - that really persistent and drizzly rain, the kind that gets you really wet. When I woke up this morning, I started scrolling through my Instagram feed. Holed up under my big duvet, I became incandescent with envy (I know it is usually rage which gets that phrase but for me today, it is envy) as I looked at the many accounts displaying honeymoon like pictures of turquoise sea, unimaginably blue sky and sand with the fineness of self-raising flour. I did a big online order yesterday for food which will be coming in the next few days and so wanted to use up the remainder of the vegetables in the bottom of the fridge, and some of the tins of beans and pulses in the cupboard along with bags of nuts and seeds in packets (which I seem to have accumulated) and in doing so make some food for breakfast and lunch.

I will buy a box of them and happily eat them through the day as a snack, the way one would usually do with a punnet of grapes. Not only because I love the way they taste but also because they have a lot less sugar in them than grapes and therefore I felt it gave me the right to eat so many more of them.
