Chocolate Chip Cookie Dough Larabar Bonbons. The Chocolate Chip Cookie Dough Larabar is one of my youngest son’s favorite treats. As you may know, Larabars are not cheap. In spite of the price, I have been buying them occasionally because I want to make my Sweet Pea happy. I am often incapable of resisting his charms. (Could you resist this face?) In order to save some money I finally decided to try making them for myself. Ingredients 4 large Medjool dates, pitted3/4 cup raw cashews2 tablespoons mini dark chocolate chips2 tablespoons cacao powder (optional) Instructions Place pitted dates and cashews in food processor and process for 1-2 minutes until completely pureed.Add the mini dark chocolate chips and pulse a few times, just until combined.

I like to refrigerate the bonbons to harden them but it is not entirely necessary. Recipe Note: The moisture content of the dates you use will impact how well the bonbons stick together. I hope you will give this simple recipe a try. Do you like Larabars? Paleo Pecan Pie / Tart - Paleo Spirit. Texas has a robust pecan industry and, not surprisingly, pecan pie is very popular there. Not far from my hometown is the famous Collin Street Bakery in Corsicana, Texas.

They have been using Texas pecans since 1896 in their fruitcakes, pecan cakes and pecan pies that ship all over the world. When I was growing up there, pecan trees, which are native to Texas, were in my front yard. I still remember the little old man coming over and using a “pecan picker upper” to harvest some from under our trees. A few days later he would show up at our doorstep with a homemade pecan pie just for us! It was his way of saying thanks and the gesture was much appreciated. Unfortunately, celiac disease or gluten intolerance means having to avoid gluten in a pecan pie even if it comes from a famous bakery, a nice neighbor or a well-meaning host at a party. Ingredients Crust: Filling: Instructions Toast the pecan halves (total of 2 1/2 cups) on a sheet pan in a 350 degree oven for about 7 minutes. Paleo Mocha Chocolate Chip Cookies (Gluten-free & Vegan) I generally use coconut flour for Paleo dessert recipes because our oldest son, Benjamin, is allergic to nuts.

But after hearing great things about it, I finally ordered some Honeyville Farms blanched almond flour. I started out to create paleo chocolate chip cookies but creativity got the best of me and I ended up with something a little different. There’s a gluten-free chocolate chip cookie recipe on the back of the Honeyville Farms almond flour bag that I used as a base. But I decided to make a Chocolate Chocolate Chip Cookie instead. And remembering how coffee enhances the flavor of chocolate, something I learned when making the Chocolate Paleo Snack Cake, I also added a packet of Starbucks Via (instant coffee) to the cookie batter. There’s enough of a resulting coffee flavor in the cookie that the word “mocha” seems appropriate to describe the coffee and chocolate combination. It seems a little mean to bake these mocha chocolate chip cookies when Ben cannot eat them. Ingredients. Paleo Chocolate Chip Cookies (Gluten-Free & Vegan) Just last week I posted a recipe for Paleo Mocha Chocolate Chip Cookies.

A salad or a healthy fish recipe would seem to be in order after that. Posting two dessert/treat recipes in a row seems overly indulgent. But I have been having a lot of fun experimenting with almond flour and this Paleo Chocolate Chip Cookies recipe is the result. I can’t wait to share it because it turned out really well. Almond flour has a high fat content. This cookie is also non-political and loves puppies and little children. Here’s Nathaniel posing for me.

Ingredients 2 cups blanched almond flour2 tablespoons coconut flour1/2 teaspoon Celtic sea salt1/2 teaspoon baking soda1 tablespoon vanilla extract (I use double strength)1/2 cup ghee or coconut oil (or butter), melted1/2 cup coconut nectar (maple syrup works well too)3/4 cup dark chocolate chips** Instructions Remove to a wire rack to cool.

Makes 30-36 cookies The cookies were surprisingly similar to other chocolate chip cookies I have had. Apple Cider Paleo Donuts. This recipe for apple cider paleo donuts is inspired by the amazing apple orchards in my adopted state of New Jersey. Apple cider donuts are commonly found at farm stands, primarily in the autumn, and usually accompanied by glasses of hot apple cider. Contrary to its image, New Jersey retains its rural and agricultural flavor throughout much of the state. (It is known as “The Garden State” after all.) The apple industry here is vibrant and farms have survived development and other economic pressures by promoting orchards as educational and recreational experiences.

Consumers contribute to the preservation of the farming heritage by patronizing local farms. My husband was initially shocked at the sight of my newly purchased mini-donut maker. Here’s a look at some of the ingredients I used: Ingredients (makes 10-12 mini-donuts) Paleo Donuts Cinnamon Sugar 1/2 cup granulated coconut sugar1 tablespoon cinnamon (I used Penzey’s Vietnamese Cinnamon) Instructions Preheat mini-donut maker. Chocolate Pistachio Biscotti (Paleo & Vegan) Living in Italy many years ago I first became acquainted with biscotti. It was long enough ago that biscotti were not well-known in the United States. After returning home, I hosted a feast for my extended family that included an authentic almond biscotti recipe.

It was something new for my family. The recipe I used was from an Italian cookbook I had purchased in that country and the resulting confections were quite crunchy and dense. In fact, I will never forget how my great aunt Ann enjoyed them. She enjoyed them in spite of the fact that she might have popped her jaw out of place trying to crunch one! The recipe I have for you today is quite different.

School is back in session for us this week. I love the poem “A Time To Talk” by Robert Frost. Do not neglect to show hospitality to strangers, for by this some have entertained angels without knowing it. Ingredients Instructions Cut the dough log into 1/2 inch slices on the diagonal with a sharp knife. Makes 10-12 biscotti. Paleo Chocolate Cheesecake. Paleo Chocolate Cheesecake is a bit of a misnomer because the Paleo Diet, by definition, does not include dairy products.

Cheesecake, obviously, has LOTS of cheese which may have you scratching your head. In strict Paleo Diet circles this recipe would probably be referred to as “Faileo” instead of Paleo. But here’s the deal, my husband had a birthday a few weeks ago and he requested cheesecake. He and I have been “paleo” for a few months and while I generally avoid dairy he does indulge in full fat Greek yogurt and heavy cream for his coffee.

I started out with Nigella Lawson’s recipe for chocolate cheesecake and modified it to be as close to Paleo as humanly possible. Instead of the graham cracker crust in Nigella’s recipe, I used almond meal in order to eliminate the gluten and increase the nutrition. The original recipe called for bittersweet chocolate but I used unsweetened dark chocolate to eliminate as much processed sugar possible. Cheesecake base: Cheesecake filling: Sauce: Enjoy! Paleo Coconut Cream Pie - Paleo Spirit. Coconut has gotten a bad rap over the last several years which influenced me to steer clear because I was deathly afraid of the saturated fat.

After discovering the paleo diet, and doing a lot of reading about saturated fats like coconut, I came to understand that it is actually quite healthful. This recipe started out as a bit of an experiment. I purchased double or triple the ingredients with the expectation there would be a few tries before I got it right. Much to my surprise, the first pie turned out AMAZINGLY good. The coconut crystals taste a lot like brown sugar and imbued the custard with a really rich caramel flavor while being very low glycemic. I was astonished at just how exquisite the pie tastes and how perfect the texture of the crust turned out to be. One of the reasons is because coconut flour is extremely dry. Dark Chocolate Lover’s Chocolate Bar which is 85% cacao. Crust Filling Dairy Topping (optional) Topping Place the coated pie shell in the refrigerator to harden. Paleo Spiced Apple Compote. This compote recipe started out as a way to “spice up” a family favorite.

My kids love applesauce. I have always served them unsweetened applesauce and they don’t seem to mind, but when it comes to dessert they expect something a little more exciting. For this recipe I used ghee, which is clarified butter. (Learn how to make your own ghee in the oven.) Ghee is useful in a strict Paleo diet because the milk solids have been removed. It adds a pleasant smoothness and richness to the dish. You can substitute extra virgin coconut oil or pastured butter if you prefer. Ingredients 6 apples, peeled, cored, cut into 1/2-inch slices1 cup water2 tablespoons fresh squeezed lemon juice2 tablespoons chopped dried cherries (unsweetened if possible)1/2 cup chopped dried apricots2 teaspoons ground cinnamon1/4 teaspoon ground ginger1/4 teaspoon ground cloves1/4 teaspoon ground nutmeg2 tablespoons ghee (clarified butter)1 tablespoon fresh lemon zest Directions Related posts:

Pineapple Coconut Ice Cream (Paleo & Dairy-Free) This post should probably be titled “Pineapple Coconut Ice Cream and Perfectionism.” It’s been a while since my last post and I’ve been pondering why I have been so slack. It IS summer and we DO have a lot going on. But I realize the other major reason is I am letting my tendency to perfectionism take over. This is not a good thing. Perfectionism does not mean everything one does is perfect. Far from it! It can become a crippling habit! Take this recipe of Pineapple Coconut Ice Cream for example. I have tested it a few times and each time it has turned out delicious – as verified by my ice cream connoisseur husband, G. How silly is that?! I could lay some of the blame at the feet of Pinterest with all its amazing food photography.

Making recipes is fun and so is taking photos and I want to keep it that way. Enough with my personal angst. This Pineapple Coconut Ice Cream is a custard-based ice cream so there is some cooking involved. Ingredients Instructions Thanks for stopping by! Paleo Chocolate Birthday Cake. For my husband’s birthday a few weeks ago I made him a Coconut Flour Paleo Chocolate Cake with Chocolate Ganache Bacon Frosting. It was a big hit. (You could easily leave the bacon out of the Chocolate Ganache Frosting if you are less than thrilled about trying that seemingly crazy scheme.) Here’s a closer look at the cake after it was sliced. Sorry, but I can’t resist showing off my blue hydrangeas. I love hydrangeas! Back to the chocolate cake. In the chocolate ganache frosting post I promised to provide the recipe for the cake itself in the next entry.

Poor me. This time I chose to make the coconut flour cake with a Coconut Honey Frosting. And because the layers were quite thick, I cut each one in half and made a four-layer paleo chocolate cake. Is it a Paleo Chocolate Cake or a Devil Dog? My husband, G, took a few bites of the Paleo Chocolate Cake with the Coconut Honey Frosting and remarked it tastes surprisingly like a Devil Dog. At first I was mortified. Don’t be mad at me. Enjoy! Signature Raw Paleo Truffles Revisited for Valentine's | Paleoista. I don’t typically do a re-post of something I’ve written about before, but there are certain things that are worth the exception; like my recipe for decadent Paleo truffles.

I feel in two minds about posting Paleo dessert recipes because many people still view dessert in the wrong light, as in something you eat often (even every day!) And that’s part of normal, day to day Paleo fare. Not true. I see dessert as something to enjoy perhaps once per month, if that. Otherwise, it’s all about the veg, protein and great fats! Even though my recipe is made with Paleo ingredients, along the same rationale that paleolithic man probably did indulge in honey, once in a while, the idea is to have a special treat in modern day, again, only once in a while.

Like at Christmas (when I originally posted this) and perhaps at Valentine’s. Enjoy! Raw Paleo Truffles ½ cup raw cacao nibs, ground, plus a little extra for dusting ¼ cup coconut oil ¼ cup coconut butter ¼ cup creamy roasted almond butter ¼ cup honey. Paleo Dessert Recipes. Paleo. It’s a scary word…if you don’t know what it’s about. And I didn’t. Chills literally thrummed through me when I thought about the restrictions that I thought came with a diet like this.

Until now. After researching Pinterest for all these super crazy deserts that won’t wreck your waist…I’ll soon be giving Paleo a shot! This diet is based on foods you find in nature. Warning: It was REALLY hard not to fill your screen with decadent and luscious chocolate recipes, but I managed, I hope, to satisfy a little of everything here. Let’s take a look at some of the most Pintivating Paleo Pallet Pleasers on Pinterest! 1. There really isn’t much to say about these…the Pin pretty much speaks for itself! Recipe (Via health-bent) 2. Ah, the pain of Girl Scout cookie time…it only offers torment by family members as they devour all the Girl Scout goodness right in front of you! (Via Mrs Paleo) 3. Next to Oreos, these were always my weakness…yet, who knew that you can have your Thin Mint and eat it, too! Chocolate Paleo Snack Cake - Paleo Spirit. Chocolate Paleo Snack Cake is fast becoming my boys’ favorite snack during our after school “tea time”. Before moving on to homework or other activities after school we take a few minutes for tea and a snack and share with each other about our day.

I have overheard my sons proudly telling their neighborhood friends they can’t come out to play until after tea time. It’s become something we all look forward to even when the snacks are very simple. On the afternoon of the first day of school, per Sweet Pea’s request, I got a little fancy and decked out the table for a more formal tea time. He was TOTALLY into it as you can see. Jelly donut cupcakes from Elana’s Pantry were on the menu that day.

I refer to this recipe as a “paleo snack cake” because it is 100% paleo, full of nutrition and sweetened only with fruit. The chocolate paleo snack cake is so tasty I hate to focus on what is NOT in it. Chocolate Paleo Snack Cake Recipe Ingredients Instructions.
