Although it is unusual for me to steer towards sweet cocktails, I find myself completely overcome with infatuation for this spirit. Like most of our chocolate desserts we use raw cacao sweetened with honey, a little vanilla, lemon juice and, this time, a splash of amaretto to spice it up! But this pudding has some secret ingredients - sometimes after a rich meal we like something heavenly and light to finish on that sweet note. So, instead of the full-fat raw cream and pasture-raised eggs to provide the smooth base for our chocolate concoction we use a very Brazilian combination of avocado and banana! This makes it a fabulous recipe for some of our clients who suffer with allergies and is perfect for vegans and anyone on a dairy-free diet.
