Mini Pumpkin Pies « offbeat & inspired. Pumpkin pie has never been something I particularly loved.

I’ve always been more of an apple pie sort of gal, but when my sister was visiting we decided to do pumpkin pie for fall’s sake. I’ve had these Le Creuset mini cocottes (baby Dutch ovens) for a while now and I’m absolutely in love with them. Aren’t they adorable? Basically, if something can be made “mini”, I’ll do it just so I have an excuse to use these cute little things. Onto the pie! As I said, I’m not a pumpkin pie person… or at least I wasn’t – until I tried this recipe. If you don’t have cocottes, you can use ramekins. What are your favorite “mini” or individual serving recipes? *I’ve entered the Mini Pumpkin Pies in a linky over at TidyMom.net!! Hop on over to check out all the entries! Mini Pumpkin Pies Slightly adapted from “Classic Pumpkin Pie” in the Williams-Sonoma “Essentials of Baking” book.

One week of vacation spent on the water prior to my final year of high school. It should have been the beginning of one of the most memorable years in my life. It was, but for all the wrong reasons. The phone rang in mid-August and it was my uncle on the other end asking me if I wanted to stay at his cottage for a week or so. A long overdue visit. As soon as we pulled beyond the last of the shrubs and trees I could see his cottage directly to the left, half on land and the other half on the edge of the water. This was the family I never really knew growing up. For the first time ever though the popsicle didn’t help. This time the symptoms didn’t fade away after a few days. After another trip to my doctor and a repeat trip to the hospital, things started to become a bit clearer.

Probably because I was still young and naive, I never allowed my unknown illness to truly scare me. Prep: Simple, fast. Key Lime Tarts. Celebration Cake. The no-bake chocolate peanut butter oatmeal “cookie” Sunday May 17, 2009 To me, no-bake cookies come right out of old cookbooks with worn canvas covers. I’ve seen plenty of no-bake recipes while browsing through my vintage cookbook collection, but never thought to try them myself. Then I spied these no-bake chocolate peanut butter oatmeal cookies on Ezra Poundcake and something told me….Go! Now! I’m actually hesitant to call this a cookie. These cookies/candies make use of the stove top, so they are perfect for summer sweets when turning on the oven would be criminal.
