Crock Pot Pork Roast with Sauerkraut

I was digging around and found a pork roast and some leftover sauerkraut and came up with a dinner plan that took about 5 minutes to prep. All you need is a crock pot, preferably a cute one with owls on it, a pork roast, sliced onion, sauerkraut, and whatever meat seasoning you prefer. One thing I have been doing since I heard Michael Symon talk about it is seasoning the meat the night before cooking. I did that with a seasoning blend and I really think it makes a difference in the final flavor of the meat. Layer in the onions, if you want you can also add some potatoes in. Put the roast on top of the onions. Spinach Prosciutto and Mozzarella Stuffed Pork Tenderloin. Serve this with potato parsnip mash, skinny garlic mashed potatoes, or creamy cauliflower puree and some roasted vegetables on the side. Are you ready for the holidays? As you know, marinades are my fave way to infuse my meat with flava without a whole lotta work involved besides the throwing it on the grill part. This one did not disappoint....a little sweet, a little bite, a lot of love. I usually just stick with my standard chipotle pork chops marinade but have been venturing out lately so I thought I would give this one a shot. I used to shy away from anything with honey in it but I've grown to love the subtle sweetness it lends without going overboard. This is going to be made again, you can bet on that!

Mix all ingredients together and marinate 4-6 pork chops overnight. Please excuse the short, simple post as it is Monday and I am working on getting my brain right after a phenomenally relaxing weekend....I'll work on being more witty tomorrow :) In the meantime, just go ahead and drool over those charred grill marks there...mmmmmm!! Ham and melted cheese topped with a poppy seed butter sauce. I know what you are thinking…ham and cheese sliders; does that really require a recipe? The answer is YES it does. These have so much flavor. Sure you have your classic ham and cheese sandwich as the base of the recipe but then you top it with a flavorful poppyseed sauce. Grilled balsamic garlic pork tenderloin. I've been on a "carb free after 5 pm" thing lately....well, kinda.

When I say carbs, I mean no pasta or bread, I still drink milk and eat veggies with carbs in them (corn, etc). I honestly think if you're trying to kick start some weight loss, sticking to protein and veggies late in the day is key. The best part is, I never go to bed hungry when I have a plate full of meat so it's a win-win! It's worked...although I've been working out at Kosama since January 9, when I did my last test out the scale hadn't moved. Yes, I had lost fat mass and gained muscle (they have a special scale that tells you all that) but it's disheartening to know after all that work that you still weigh the same.

P.S. 5 garlic cloves, finely minced 2 T balsamic vinegar 2.5 t salt .5 t ground pepper 2 T olive oil pork tenderloin. Pork Chops and Applesauce. Pork loin chops, seasoned with paprika, sage, thyme and spices then lightly pan fried and served with homemade applesauce.

When my applesauce was simmering in the crock pot, I knew I would be serving it with pork chops. I served them with buttermilk mashed potatoes and an Autumn Salad with Pears on the side. You can make this with boneless or bone-in pork chops; center cut pork loin chops are a good option because they are pretty lean, just be sure not to over-cook them so they don't dry out.

According to the USDA, cooking pork to 145° F and letting it rest for three minutes will give you juicy chops that are safe to eat. Season pork chops with paprika, garlic powder, sage, thyme, salt and fresh pepper to taste. Place flour on a small flat plate and lightly pat the chops with flour, shaking off any excess flour so they are lightly coated. Heat a large skillet over medium heat and add butter when the pan is hot.
