Blueberry Galette with Cornmeal Thyme Crust

I was developing two grilling recipes for a client, searing ribs for the hell of it (plus they were on sale at Whole Foods), and working on a post about smoked chicken tacos for Jamie Oliver. I was one hot mess of sweaty smelling smoke with a camera when I got the brilliant idea to add flame to the fire and bake a pie to go along with all of this glorious food.

But with one look at the state of my kitchen, I knew that slaving in front of a dirty stove top to make pie filling while attending to one grill, a huge smoker, an attention crazed dog, and a wild summer-loving child was not in the best interests of my time or sanity. That’s when it dawned on me to make a galette or as I always call it — crostata. Galettes are so incredibly easy and take little effort to throw together. In the end, my sanity was saved (or what’s left of it) and we had a delicious fresh dessert to top off our meal. Peach Tart Recipe on Food52. Spiced Apple Upside Down Cake. This pie is as easy as is it gets, and mighty, mighty good too. I mean real, real, good. Potato, Apple and Onion Pie with Taleggio : eat in my kitchen

Since the season started, I’ve already pulled a few of them out of my oven, Nigella Lawson’s potato, cheese and spring onion pie is one of my all time favourites. Imagine coming home after a walk through the pouring rain, your bones cold and clothes wet, and then you see – and smell – this golden beauty on the table. Just the idea is so tempting that I could walk straight back into my kitchen and bake another pie. Nigella’s recipe inspired me to think about possible potato fillings wrapped in short crust – with apples and shallots for example. The fruits are at their peak at the moment, crisp, firm and packed with juices, they fill the air in my kitchen with the sweet smell of autumn. Today: Make a crust and some filling, top it with your favorite seasonal fruit, and you've got fancy-looking frangipane tarts. Frangipane tarts are one of those classic French desserts that sound super fancy, but are actually pretty simple to make at home, and you can adapt them to any season. To keep things extra easy, I like to start with a simple tart dough that can be pressed into the pan (or pans, if tartlets are your thing), then I fill the pre-baked tart shell with rich frangipane cream made from ground almonds held together with a bit of butter, eggs, and sugar. When it bakes, the frangipane puffs up and turns golden brown, enveloping whatever type of fruit you’ve decided to top it with.

Because frangipane is fairly neutral in flavor, you can top these tarts with just about any fruit you like. For the Crust. Yogurt Cardamom Tart Recipe on Food52.
