Taste of Beirut – Falafel express. When in Beirut or any other Middle-Eastern city, making falafels at home seems superfluous; after all, every neighborhood offers at least one great falafel joint. In Dallas, however, one needs to plan a trip to a Middle-Eastern restaurant or make one’s own from scratch; the made-from-scratch version requires some time. This is a speedy version of the traditional falafel, presented as a bite-size appetizer with some tarator sauce. I used some leftover pesto instead of fiddling with fresh herbs and it worked out just fine.

INGREDIENTS: 50 bite-size falafels For the sauce: 1 cup of tahini1/2 cup of fresh lemon juice1/2 cup of water2 cloves of garlic, mashed with a dash of salt1/4 tsp of Aleppo pepper or paprika Drain the chickpeas. For the maple tahini sauce place all the ingredients in a high-powered blender and combine until smooth. Warm up the mini pitas in the oven during the last couple minutes of baking the falafels. Halloumi and Quinoa "Keftedes" I really struggled with this recipe and post. The recipe all worked out fine it's just that I wasn't sure what to call this creation.

I thought about using "balls", patties and even meatballs! But meatballs didn't really go as there is no meat in this recipe. Fritters would have been the best option but alas these were baked, not fried. Finally I decided on "keftedes" the Greek word for meatballs. Just recently I posted my tomato fritters- "domatokeftedes" recipe which was completely vegetarian. Ok. Surprisingly these were good. I mean they have halloumi in them, how can they not taste good! Shaping them was "interesting". I've flavoured them with a little red capsicum, parsley, mint, dill and a little cumin. To give them a little bulk and to keep them together I've used a combination of tapioca flour and a little almond meal.
