My latest kitchen experiments have me feeling more like a mad scientist than your average home cook. After discovering the joys of making raspberry vegan ice cream, I was forced to up the personal ante a little more. I had planned a small brunch in my already cramped apartment for a few people. In my head, I envisioned a “buffet style” menu. Fruit salads, muffins, pancakes, scrambled eggs and mini chipolatas would be taking centre stage. Then the came the phone call from a good friend, informing me that she had been diagnosed with a gluten intolerance. She had taken the news quite well, knowing that it was not the end of the world.

You know I love food holidays, so of course we are celebrating. And luckily I didn’t have to wake up early to make waffles. We made Brown Butter Banana Waffles last weekend and put some in the freezer. So all I had to do is pop the waffles in the toaster this morning! I make these waffles when our bananas are too ripe to eat on their own. The waffles are light and fluffy. I would love to have people from all around the world sit down at our table and enjoy a delicious breakfast. We don’t have any plans to open a B&B anytime soon, so I will have to keep dreaming. I do like to pretend that when we have guests or make special breakfasts that our house is a little B&B. Hey, you are never too old to imagine:) We recently made Peaches and Cream Stuffed French Toast for breakfast and I told Josh that someday this decadent French toast will be on our B&B menu. Harry and David sent us a box of beautiful Sweet Oregold Peaches that were the star of the Peaches and Cream Stuffed French Toast. Later on, we diced up some peaches for Caleb and he also enjoyed them, except he wasn’t quiet. To make the French toast, we made a cream cheese filling that was sweetened with powdered sugar, cinnamon, and vanilla extract.

So far I am loving it. We haven’t had time to try a lot of the recipes, but I can just tell this one is a winner! Well, this year we set some goals as a couple and one of them was to eat more protein. Most people get plenty of protein, but I don’t eat meat, so I struggle with this sometimes. And since we cook and eat together, most of our meals are meatless. Poor Joshua. I don’t care if he eats meat, it doesn’t bug me, we just usually go the veggie route. So I am trying to sneak more protein into our diets. There are tons of variations of this meal, we really didn’t follow a certain recipe, we just used our favorite flavors. I really liked this meal.
