Strawberry Sorbet XXII Recipe. 3 Ingredient Ginger Strawberry Sorbet. Frozen Mango Bites. Have you ever had mango lassi? It’s a traditional Indian drink made by blending mango with yogurt. These frozen mango bites remind me of mango lassi. They make a simple (and kid-friendly) dessert or snack. Mango has a silky, dense texture when frozen that reminds me of ice cream. I make these with my homemade yogurt, after dripping the yogurt through a cheesecloth to make the yogurt thick.

Ingredients 2 cups mango, cut into bite-sized chunks 1 cup thick full-fat Greek yogurt (SCD/GAPS use dripped homemade yogurt) OR for dairy free use whipped coconut cream from a can of coconut milk 1 Tbs. raw honey or maple syrup Instructions Freeze the mango chunks on a cookie sheet (don't let the chunks touch). I’ve been craving ice cream lately but can not eat dairy due to a sensitivity I just found out I have. Bummer! I don’t have an ice cream maker either so I had to shoot for the next best thing… popsicles! I know, I’m sort of late getting on the popsicle bandwagon but lucky for me (and lucky for you) popsicles are good any time of the year – especially here in sunny Florida.

I made this recipe with coconut milk because it is an excellent substitution for dairy. It was the closest thing I could use to get my vanilla ice cream fix on. I made the popsicles on a whim and kept the ingredients simple — boy did I hit gold!
