It's important to caramelise the squash properly otherwise the soup can be a little bland. Serves 41 medium-size butternut squash, peeled and trimmed1 litre fresh chicken stock4 eggs150g spicy chorizo Olive oilSalt and black pepperA splash of white wine vinegarA few sprigs of oregano (optional) Vegetable Tian. We had friends over for dinner so I served this Vegetable Tian and it was a HUGE hit. The veggies were perfectly roasted, the potatoes were nice and tender and the caramelized onions were sweet and salty. The whole dish was delicious and it looked really pretty too. All of my friends loved these roasted vegetables and so did most of the kids. Roasted Green Beans with Mushrooms, Balsamic, and Parmesan. (Makes 4-6 servings, recipe created by Kalyn) 8 oz. mushrooms, sliced in 1/2 inch slices (I used brown crimini mushrooms, but any mushrooms will work)1 lb. fresh green beans, preferably thin French style beans1 1/2 T olive oil1 T balsamic vinegarsalt and fresh ground black pepper to taste2 T finely grated parmesan cheese Preheat oven to 450F/230C.
