Zucchini & Squash Squares

It was inspired from a similar dish that I made from Paula Deen’s Magazine. I find that with her magazine a lot of her recipes are hit or miss. Some are SO good and others are just awful. Recently I’ve made two of her magazine recipes in a row that I hated. It makes me sad : ( because I really like her… Anyways, I really loved the concept for the last dish I made- Zucchini Squash Tart with Cornmeal Crust.

To solve the problem of excess liquid, I used the same method as I did for the Zucchini Fritters I made a few moths ago. All in all I think the recipe turned out great! Parties – like the ones we have – for the Super Bowl aren’t the kind where guests sit at the table and practice their fine dining etiquette. 6. Baked Buffalo Tofu Bites. By Sarah on September 9, 2014 Vegan football food!

Baked Buffalo Tofu Bites

Is that an oxymoron? I’m pretty sure it is. If I had to guess I’d say that less than 1% of football fans are vegan, or even vegetarian for that matter. But for those of you that are and don’t feel like eating the standard processed faux hot dog, fear not- I’ve gotcha covered. These tofu bites are bursting with flavor from a spicy buffalo cornmeal breading that pairs perfectly with a cool blue cheese sauce.

I mean, can you believe that coating? So let’s talk about tofu for a second. To avoid that, I recommend using extra firm or super firm tofu and possibly one that isn’t soaked in water such as this brand. For the coating I used was a combination of whole wheat breadcrumbs, medium-grind cornmeal, and brown rice flour but feel free to substitute gluten-free breadcrumbs and/or any kind of finely milled flour you have on hand. Ingredients 20 ounces super firm tofu 2 tablespoons ground chia seed 1/2 cup flour (I used brown rice flour) Spiced Chickpea and Carrot Fritters with Curry Yogurt Sauce.

Cauliflower Tater Tot Casserole. Cauliflower tater tot casserole is a weeknight dinner is sure to please your family and your waistline.

Cauliflower Tater Tot Casserole

A secret ingredient gives this classic comfort food a healthy makeover! Growing up, my nickname was “Tater-tot” Partially because I was really tiny (not much changed. WAH) but mostly because I couldn’t pronounce “Taylor,” so I called myself “Tate.” Of course, that snowballed into “tater-tot,” and then it just kind of stuck. Forever. Because of this, I always felt just a wee bit strange about eating tater-tots for dinner when Mom made them.

That’s what I thought. If you must know the truth, I got over my weird feelings pretty darn quick. But, then I grew up and I couldn’t eat them every single day, for all the days of my life. But tater tots, among other things like hamburger pie and mac & cheese, are just an ultimate comfort food that I couldn’t part ways with. Challenge accepted. I’m sure ya’ll have heard of the wonders of cauliflower. It can make INCR-EDIBLE “cauli-tots.” Ingredients. Charred Tomatillo Salsa. Zucchini-pesto fritters.
