Curry Chickpeas. When I was first transitioning to a plant based diet, this was one of my staple meals.

It is really easy to throw together and really cheap to make. It is also great as left overs. It is oil free, and packed with nutrients, enjoy! Estimated Cost Per Serving: $.50 Ingredients 1 Can of Chickpeas, rinsed and drained1/2 Cup of Diced Yellow Onion1 15oz Can of Fire Roasted Tomatoes2 Tablespoons of Curry Powder1/2 Teaspoon of Cinnamon1/2 Teaspoon of Cumin1/2 Teaspoon of Ginger2 Cloves of Garlic, minced4 Kale Stalks, stem removed1/8th Cup of Water Method Step 1 Preheat oven to 450f. Step 2 Mix cinnnamon, cumin, ginger, and 1 tablespoon of the curry in a bowl. Step 3 Place chickpeas on a non stick baking sheet. Step 4 While chickpeas are cooking, heat garlic and onion in a non stick pan for 2 - 3 minutes. Step 5 Add fire roasted tomatoes, water, and 1 tablespoon of curry powder.

Step 6 Place kale in a food processor, and pulse until kale is in small pieces. Step 7. Curry Chickpeas. Mexican Rice. This rice has to be the cheapest, tastiest thing that I make.
