Sparkling White Chocolate Lemon Truffles. Sometimes I get in weird moods and make things with lemon. This is weird because I am soooo not a lemon girl. I’m an I-want-cheesecake, give-me-treats-so-rich-they-make-my-teeth-hurt and I-don’t-even-trust-you-if-you-attempt-to-feed-me-fruit-for-dessert type of girl. It’s just who I am. And it’s not going anywhere. And fruit isn’t dessert. Don’t even start. There’s been a few of those instances though where I end up craving something with lemon for one reason or another – it just tastes FRESH. Necessary. Mandatory. And then I went and covered everything in these sparkly sugar crystals and well, heck.

Could it BE any more perfect? Print Save Sparkly White Chocolate Lemon Truffles Yield: males about 30 truffles Total Time: 2.5 hours Ingredients: 10 ounces high-quality white chocolate, chopped 2 tablespoons unsalted butter 6 tablespoons heavy cream 1 teaspoon corn syrup 1 drop lemon extract or pure lemon oil the zest of half a lemon white sanding sugar for coating Directions: Toasted Coconut Tilapia with Pomegranate Salsa. Do you know how I really want to tell you about this recipe? Probably not. I mean, the mere thought of what I want to do is practically extinct, let alone the actual method – which is most definitely obsolete. But ideally, right this instant, I want to record it on a tape… a, cassette tape? And send it to you in the mail. Not on my iPhone. Really, I’m just deep in the throes of a heated Felicity marathon. This is approximately the 12th blog post where I talk about just how MUCH I love it. Okay, maybe I won’t subject you to that. Too much? Fine fine. It’s too simple to really be called a recipe; after all it’s just cooked in coconut oil (my favorite way ever) and covered in toasted coconut which blankets the top just enough to be crust-worthy without all of the work.

I will eat almost anything covered in fruit salsa. Print Save Toasted Coconut Tilapia with Pomegranate Salsa Yield: serves 2-4 Total Time: 30 minutes Ingredients: Directions: salsa Combine all ingredients together and mix! Crispy Avocado BLT Salad. A salad on a Saturday. But it has fried avocado. And bacon. And honey lime vinaigrette. And a spicy ranch ranch drizzle! I could get used to this. You can find the recipe on the Tasty Kitchen blog.

Springtime Crockpot Minestrone. I have a few bones to pick with the universe. And by the universe, I mostly mean the weather. So totally cliche, right? Wait. Oh wait. This is bad… I mean, really bad. Can either of those be considered human interaction? I think I’ll sleep on the treadmill tonight. It’s just that right now it seems like we skipped right over Spring… went directly from winter to almost summer. I’m also wondering why must I find a pretty, watercolor pillow I like online at Anthropologie that costs about $500. And why must cheese have calories? Oh and the biggest thing I’m so annoyed with right now is that lots of cute crop top type things are apparently back in style, like Kelly Kapowski type crop tops and I am most definitely too old to wear that stuff. To deal with the insanity that the clouds above are tossing our way, last week I made some soup that screamed springtime when it decided to snow after the first of April.

This soup is embarrassingly easy. This is making me feel better about all the cheese. 20-Minute Turkey Taco Nachos. Red Wine Marinated Flank Steak with Cherry Tomato Caprese Salsa. I wish we could eat this together. It might be the best thing to come out of my kitchen in a few weeks. It was just… different. Different than what we’ve been eating in hibernation. A little summery. Sort of light. Perfect for lunch with my invisible internet friends where there is half a bottle of wine leftover. One of the reasons I’m insanely excited about the forthcoming warmer weather is because it makes my caprese obsession much easier to handle.

You’ve probably noticed that flank steak tends to be the only steak I share with you. (edited to add: unless you count blue cheese sauce trashing something up. whatever.) But flank steak can be marinated and sliced and put in a million things (saladstacospizzaomg) and often ends up flavored so nicely. It was horrific. So after a few major flank steak fails, my favorite way (that I find foolproof) is to broil it. This whole “salsa” is essentially a little salad over top of some steak. I wish I wasn’t ever feeling carbs. Print Save Ingredients: Pasta Carbonara with Leeks and Lemons. I know what you’re thinking. Pasta carbonara? The week after Thanksgiving? Who needs it? But, and forgive me if I’m wrong, I think you might be thinking of an entirely different dish, one containing cream and butter and vast amounts of cheese? I had misconceptions, too. But true pasta carbonara is in fact light, containing no cream at all.

With bacon and eggs on hand, dinner can be assembled in a flash. When my dear auntie was visiting last week, she brought me some goodies — eggs, bacon, sausage and chicken — from Kinderhook Farm in New York. Pasta Carbonara Source: Everyday Food 1. 2. 3. Beautiful eggs from Kinderhook Farm: Honey, Lime & Curry Chicken Stir Fry. You’ve probably noticed (in my play-by-play photos) that I used my Baccarat 28-cm Hard Anodised Stir Fry pan a lot. It’s a pity that it doesn’t come with a lid.

But I’ve managed to find a $10 multi-fit glass lid from Woolworths that worked like a charm. Besides a non-stick stir fry pan, I have a carbon-steel wok (which I seasoned myself) that makes my stir fry tastes a-ma-zing! It heats up over my gas stove in no time, and you can literally see the smoke oozing out. That’s what you want when you make stir frys, a lot heat because the breath of wok is what make a stir fry taste like Chinese restaurant style (to some extent). But in the context of maintaining your pots and pans, it requires a little more TLC than just wash-and-tuck-it-away.

To give my well-used Baccarat pan a rest, I decided to take my carbon-steel wok out for a spin again. Asian Steak Salad with Bok Choy. I swear this is the last of the Asiany foods for a while. And ohhhh my is it a doozer. I’ve rather enjoyed our little trip together! We’ve canoed through rivers of fish sauce. We’ve snorkeled in soy. We’ve climbed the ropes of vermicelli noodles. And today we shall bok the choy. Wait! That only made zero sense.

I wasn’t sure whether or not to call this is a salad, because everything is warm and seared and silky and wilted. And the dressing? Sear sear sear. Skillet salad Shangri-La. Your mom called. Ricotta Pizza with Prosciutto and Fresh Pea Salad. I think I had a mini mid-life crisis.

It all started when my daughter asked to listen to the satellite radio station 80′s on 8 on the way to school. Bananarama started blasting through the car speakers: Goddess on the mountain top…Burning like a silver flame… The jingly tune was so familiar, and brought me back to 1985, when I would rock out in my plaid uniform jumper and knee high socks. I was just a tad older than my daughter is now. Then there was the visit to the zoo. My daughter and I were having some girl time last week, and I spotted the dad with the Baby Bjorn and the mom with the Petunia Picklebottom backpack. I drove down the boulevard and glanced at the rolling green hills in the park. There was the photo album my kids pulled from the shelf. But after each of those little mini-crises, my mind calmed. And what does this have to do with pizza? Yield: Serves 4-6.Prep Time: 5 minutesCook Time: 20 minutesTotal Time: 25 minutes This is my new favorite way to enjoy a pizza bianca.
