Combine butter and caster sugar in a large bowl, beat with an electric mixer on low speed until well combined, then increase speed to high and mix until pale and fluffy. Add Demerara sugar and beat to combine. Add Nutella and eggs to the butter mixture and beat to combine. Combine flour, baking powder and bicarb. Line a baking tray with baking paper. Bake for 8 mins in the centre of the oven, then remove and allow to cool for about 5 mins on tray - the cookies will become hard when they cool, then transfer to a cooling rack and repeat with remaining cooking mixture. I didn’t change much… just added a few crushed Oreos to the filling. Not only is it super delicious but it is so easy to make and is always devoured in no time by the family. With it’s salty buttery crust and sweet caramel filling, it is the perfect sweet and salty mix. Whoever decided that Pi Day is not an official, national, get-the-day-off-from-work kind of holiday has obviously never made a pie. Not that they’re sOoOoOoOo hard, but between the chilling, the blind baking, the cooling, and the baking again? This is a Christina Tosi recipe and I surmise this pie and the real thing have a fair amount in common. The addictive quality, thinking about it when you shouldn’t be, and wondering when you’re going to get it again are likely common themes for both. I can say definitely that all rings true with regard to crack pie. Like all of Christina’s recipes, there are multiple steps and recipes within recipes but the results were worth it. First, let’s talk about the crust. That’s right, after cooling, the cookie is crumbled up with a bit more brown sugar and more butter, and packed into a pie plate as the crust.
