Growing up as a picky eater who did not like turkey, stuffing, sweet potatoes or green beans, I think it’s safe to say that navigating the massive buffets at Thanksgiving was a bit of a challenge. But for me and everyone else at the “kids” table, cranberries always came to our rescue! So for your kiddos, or the young at heart of all ages, here’s a fun twist on your cranberries this year — these Mini Cranberry Yogurt Parfaits ! They are all of the goodness of a fresh, whole-berry cranberry sauce layered with vanilla Greek yogurt. Super simple, a little healthier with that added Greek yogurt bonus, and wonderfully sweet and delicious. For an extra fun “sparkle” for the kiddos, you can even sprinkle some edible glitter or a pinch of sugar on top.
My absolute favorite dinners are the easy weeknight kind. The kind that can be whipped up in thirty minutes or less from start to finish and only mess up one dish. And of course, they need to knock-my-socks-off with flavor as well! I am so in love with this spicy, creamy, cheesy pasta for all of those reasons.
