Getting The Protein You Need

http://www.treehugger.com/green-food/on-moving-toward-vegetarianism-getting-the-protein-you-need.html Photo by Kelly Rossiter Hands down, the number one response I get from people when I mention that my children are both vegetarian is "but how do they get enough protein?" I make parathas often – they are a delicious, substantial meal and you can fill them with lots of different things. I usually make the traditional paneer parathas or aloo (potato) filled parathas. A spicy and savory Mexican flavored dish that pairs well with spring veggies. Step-by-step photos illustrate this delicious recipe submitted by 5boarder. This is one of the quickest meals I know, although I discovered it in one of the most leisurely places on earth. Strolling along the beach near Ocho Rios in Jamaica, I came across a man cooking creamy coconut rice, smoky-tasting greens, and velvety red beans, all in an iron kettle set over a charcoal fire in a shack. He ladled out this modest food onto a paper plate, and I ate it sitting on a log beside the sea.
