In particular, may favourite way to enjoy some of those leftovers is a roasted turkey sandwich stuffed full with cranberry sauce. After enjoying a few of those sandwiches this year it was time to try something new, a Cuban style leftover turkey sandwich that I came across last year on Panini Happy. The Cuban sandwich generally consists of roast pork, ham, swiss cheese, pickles, mayo and mustard and this Thanksgiving leftovers version uses roast turkey rather than the pork and it adds a healthy dose of cranberry sauce to the mix. With all of the cranberry sauce, mayo and mustard in these sandwiches, they can be a bit messy but they are definitely worth it!

The cranberry sauce works surprisingly well with all of the other flavours in this sandwich, so well in fact that you will hardly notice all of the cranberry sauce and mayo dripping down your chin after taking that last bite. One of the things that I like about po'boy sandwich is that there are a lot of different ways of making them and my favourite up until now has been the spicy shrimp po'boy with remoulade sauce. I recently came across a new interpretation of the sandwich in the form of a fried tuna ball po'boy on Eatin' on the Cheap and I just had to try it!

In essence this is just a simple tuna salad that is formed into a ball, fried until nice and golden brown and crispy and then thrown into a sandwich along with a tasty remoulade sauce. It is hard to go wrong with deep frying and these tuna balls are addictively good with their crispy outsides and their soft, warm and tasty insides. One leftover I am always happy to have is some leftover roast turkey as I can't get enough of those roast turkey sandwiches. Over this last weekend I got the chance to dig into the last of my roast turkey leftovers and this time I used them to make some Rachel sandwiches which are a variation on the Reuben sandwich. There are several different versions of the Rachel including replacing the corned beef with turkey or pastrami and the sauerkraut is sometimes replaced with coleslaw. I could not really decide which version sounded the best so I tried both a turkey with sauerkraut version and turkey with coleslaw version. Since coleslaw is already in a dressing I saw no need for there to be two so I also tried a version where I replaced the coleslaws dressing with the Russian dressing for a turkey and Russian slaw Rachel.

I like to start my roast beef sandwiches off with some sweet caramelized onions, which take a bit of time to make but for what they add to the sandwich, they are so worth it! Next up I like to add a bit of bite and I am always torn between using some horseradish or some grainy mustard so I very often just decide to combine the two along with some creamy mayonnaise. Cheese is always a welcome addition to any roast beef sandwich and you can go with some sharp and tangy cheddar or some smooth and creamy swiss or provolone and since melted cheese is always better, you can throw your sandwich under the broiler for a minute or two. There is just something magical about the combination of tender corned beef, tangy sauerkraut, creamy Russian dressing and Swiss cheese wrapped in rye! I like to grill my reuben sandwiches to melt the cheese and give the rye a nice and crispy texture a warm buttery flavour. I have been picking up at least a full basket of them every week and most weeks they have disappeared long before the end of the week. Primarily I have been enjoying them in BLT sandwiches but recently I had a new idea and that was for a caprese grilled cheese sandwich. The idea came from a caprese salad which is a nice and simple salad that consists of tomatoes, mozzarella and basil and I figured that it would make an excellent grilled cheese sandwich!
