The Taipei area is lucky to have a number of hikes that can be reasonably called ‘classics”: Huangdidian, Bijia Mountain, Seven Star Mountain, the Jiajiuliao Ridgewalk and Shitikeng Old Trail are all familiar and well-loved hikes within an hour or so of the city that are ‘bagged’ at some time by most local hikers (and we’ll be doing the first, second and fifth of them in the next couple of months with the group).

In my humble opinion, however, if an award was to be given to the very finest hike in the Taipei area, the laurels would be split evenly between a pair of slightly less strenuous walks on the headwaters of the Keelung River: the Loyal Son Mountain and the Sandiaoling Waterfall Walk. It was the Sandiaoling Waterfall Trail that we did in the searing heat of last Saturday: a good choice, as we got to enjoy the shade of the trees for most of the way. It may sound funny to foreigners who are loathe to try the unique dish, but after visiting Dai's, one may find that stinky tofu really doesn't taste as bad as it smells. Almost every dish at Dai's is made using stinky tofu. There are the typical tofus; steamed, stir-fried, and grilled, but Dai's is the only place in the world, according to owner Wu Hsu Pi-ying (), that serves cold, raw stinky tofu. Decades ago, stinky tofu was a military staple for soldiers patrolling China's borders. But as Taiwan's night-market culture developed, so did stronger, spicier and more diverse flavors of stinky tofu. Unlike most night-market stinky tofu stands where the odor permeates the air, Dai's house is simply a clean, ordinary restaurant with a huge Crouching Tiger poster on the wall.

The somewhat freaky cold stinky tofu (涼拌臭豆腐) is actually quite refreshing -- similar to, but milder than blue cheese. Street food foray into Taiwan's night markets. OK, you don't go to a night market for a sumptuous feast worthy of Michelin stars and postcards home. But in Taiwan, the imagination and innovation on display in even some of its simplest snack stalls is something to behold. Its night markets are run through with traditional foods, deliberately unchanged for generations, right next to food hawkers deconstructing and reconstructing street food essentials into something that's at least worth a quick email (or article).

So here's a quick tour of the top night markets in four major cities around Taiwan, and their most salivatory dishes. Stinky tofu Shares the same love or hate relationship most people have with durian. Stinking, fermented tofu is deep fried and served with pickled cabbage, carrots and chili sauce. I hated stinky tofu when I tried it in mainland China, Hong Kong and other Chinatowns around Asia, but I love Taiwan’s version.

Taiwan became one of the first countries in the world to offer free Wi-Fi on a mass scale to its citizens, and now it is extending that to any foreign tourist, also for free, in a move that will gain it a lot of goodwill. The Taiwan government-backed free “iTaiwan” wireless network launched in 2011, and now has about 4,400 hotspots in major tourist spots, transportation hubs, cultural establishments and government offices all over the island country. Citizens needed just their local phone number to register and then use the semi-fast 1 MBPS service. Now, for foreign vistors, who generally have trouble getting a local SIM in the country (two forms of identity, etc), the process of tapping these wi-fi networks has been made a lot easier starting this month.

Visitors can open an iTaiwan account at a Taiwan Tourism Bureau counter/center, show their passport as ID and that’s it: they can login using their account, on their digital devices. Story from Rafat Ali, at Skift Other stories from Skift:
