The Easiest Banana Oat Cookies | One Ingredient Chef. The holy grail of healthy cooking is to make something so delicious that you want to eat it all day long… and so healthy that you CAN eat it all day long. If the recipe is easy as well, you’re really onto something. These cookies are about the closest thing I have ever found. They are sugar-less, flour-less, easy to make, and so delicious you’d never know they’re healthy. The base is simply made from mashed banana and rolled oats, with some date sugar, spices, and whatever throw-ins you’d like.

. – since it’s hardly more than banana and oats, this is one afternoon snack you can feel good about. Makes 12 cookies Ingredients: 3 bananas1 3/4 cups rolled oats1/2 cup date sugar 1 teaspoon vanilla2 pinches cinnamonOptional add-ins (see below) Preheat oven to 350º F Step One Grab 3 bananas and mash them with a fork until no chunks remain. NOTE: Date sugar is not actually a type of sugar. Step Two Spoon the batter into 12 rounds and place them on a Silpat or lightly-oiled baking sheet. Throw-in Ideas. Vegan Peanut Curry with Chickpeas and Sweet Potato | Dietitian Debbie Dishes. This vegan peanut curry with chickpeas and sweet potato is the newest addition to my back pocket repertoire of simple and fast weeknight meals! I have made it a couple times already and packed the leftover for my work lunch and I can’t get enough of it! You only need one pan to whip it all up and it usually takes me only ~40 from start to finish.

The other great thing about this recipe is that it utilizes a lot of pantry staples like chickpeas, coconut milk, diced tomatoes, and peanut butter. Keep those ingredients on hand and you are well on your way to recreating this delicious curry. This curry is a riff on the traditional West African peanut curry dish also known as maafe, groundnut stew, or domoda. Originally, the dish was made with groundnuts before peanuts were used later. This recipe makes 5-6 servings so for those with smaller households like us, you’ll get to enjoy a few days of leftovers!

When the craving for exciting, complex, rich Indian flavours comes calling I reach into my spice cabinet to complement the legumes, nuts, and veggies so prevalent in this plant-forward cuisine. The opposite of lazy cooking to us North Americans, flavours from our favourite Indian restaurants are seemingly impossible to capture at home. Though much of what we taste and experience here is an adaptation of the original dishes prepared traditionally, I can’t help but crave the connection to the culture and feel compelled to celebrate in the feast! Inspiration struck when I was savouring the deep, rich, flavourful food, known as the samosa from my favourite local Indian restaurant.

This recipe originally named the Fully-loaded Spring Samosa, I recognize that the food I created is indeed inspired by this traditional snack but by no means earns the title of a true samosa. Deep-frying can be deeply troubling But why is deep-frying so not-good-for-you? Samsosa-inspired SnacksMakes 16. Savory Rosemary Caramelized Onion Muffins. I thought I’d play around with the basic quick bread recipe and make something savory instead of sweet. It’s no secret that caramelized onions are a favorite of mine. I paired them with some goat cheese and fresh rosemary — not a new combination but one I particularly enjoy.

Savory Rosemary Caramelized Onion Muffins 3/4 cup sorghum flour1/4 cup brown rice flour1/2 cup almond meal1/2 cup potato starch1 teaspoon baking powder1 teaspoon salt1 egg1 cup milk1/4 cup olive oil plus more for greasing pans1 heaping tablespoon fresh rosemary, chopped1 large or 2 small onions, thinly sliced2 ounces goat cheese, crumbledHeat a medium skillet over medium heat. Before we get into these lovable little quiches, let’s address a personal issue I’ve been having lately: Flashdance is on Netflix. Flashdance!!! Now, this movie was before my time, but my mom had the soundtrack on cassette tape and my sister and I used to make up a bajillion dances to it in our backyard.

My favorite one to do was the instrumental song that plays throughout the movie and the love scene and whatnot. We’d take turns doing solos by track, and whenever it came to that “Man Hunt” song, we used to argue over who was going to perform it, because we both hated it. Haha. And I totally, TOTALLY, used to try to pull my sweatshirt off my shoulder to emulate the cover of the album, but all of my sweatshirts were those tight-necked things from the 90’s and stretch them as I might, there was no getting them over my shoulder. But now that I’m old enough to watch a movie about an exotic dancer, I just can’t stop! These little “quiches” are crustless, and therefore super low-carb. Related. Famous.Fashion New stylish and trendy clothing, jewelry and more! Caramelized Tofu Recipe. Ten years ago, after coming home from a weekend trip to Big Sur, I ended up throwing together one of my favorite tofu recipes ever - caramelized strips of tofu served over sautéed shredded brussels sprouts.

Toasted pecans go into the pan as well and get oh-so lightly candied as they cook alongside the tofu and sprouts. I thought I'd post a slightly updated version today. Enjoy! Here's how it came together: a quick survey of my kitchen revealed tofu and a cluster of brussels sprouts. Just a few minutes of knife work and a some fast work with a hot pan separated me from my dinner.

Some variations come to mind - throw in some nutty, chewy brown rice. Asian Ginger Carrot Dressing. Apple, Butternut Squash & Bacon (or Pecan) Breakfast Hash (Gaps/Paleo/Vegan options) Crab Cakes on Salad Greens with a Lime Vinaigrette. Every once in awhile, a girl craves a nice juicy crab cake. You know, the type you can get in the Baltimore Inner Harbor restaurants, with the big chunks of juicy crab meat? And hardly enough binder to hold it together, therefore it's like noshing on a big fat crab without the fuss of shelling it? Yeah, I know: dream on. I live in the Midwest. No seafood for hundreds of miles, besides the crab cakes are more like breaded hockey pucks around here. However, recently I came across a crab cake recipe that actually caught my attention. The crab cake recipe is from Cooking Light. Anyhoo, back to the crab cakes: The mint was a surprise but really good in this recipe, and the curry was very mild (for those afraid of the stuff).
