With summer fast approaching, our yogurt business is ramping up, my family has been in town for a visit and I haven’t had much time in the kitchen this week. I did have time for chocolate though…I MADE time for brownies. After all, chocolate + baking = important. I can’t resist a good brownie and these were no exception. Fudgy Black Bean Brownies. Raspberry Brownies. I’m starting this post out by saying, enough sweets! My goodness, have I been on a sweets kick lately or what? I guess I kind of go in phases, but to balance things out hopefully I’ll have a savory recipe next. These brownies may taste pretty amazing and I’m loving baking with raspberries, but for the record, raspberries are always best straight off the bush and still warm from the sun anyways. The original recipe that I used for this comes from Mama Pea. I actually just got her cookbook in the mail and I’m hooked already.

It’s really not just a cookbook(although there are so many recipes I just can’t wait to try) it’s really just an extension of her blog, which is awesome! I really love it and totally recommend it. When she first posted these brownies I think I made them three times in one week. I have to say the original made with unsweetened applesauce instead of raspberries is amazing, but these were super yummy with raspberries too. Raspberry Brownies.

Cranberry Almond Coconut Macaroons Recipe | The Sophisticated Gourmet. Sunday, November 14th, 2010 Here in the United States, we’re less than two weeks from one of my favorite holidays of the year. It is a time where I get to stuff my face without people staring at the skinny kid eating with his hands. It’s a time where tons of pie is made (we’ll talk about pie later on in the week). And it’s a time where I have an excuse to be in the kitchen, while other wash dishes for me. Last year, I was the leader in the kitchen- cranking out a turkey, homemade marshmallows for the kiddies, Apple purses for dessert (those didn’t turn out too well because I accidentally added too much flour to the dough- I’ve fixed that this year!) I was quite proud of all of the sweets I cranked out that day- and the turkey that my mother and I made together- it was a masterpiece with a lot of latin influence.

This year, one of the sweets that I’ve decided to make for Thanksgiving day will be these lovely Cranberry Almond Coconut Macaroons. Ooh. </i>*} {*style:<b>Ingredients: </b>*} Nutella Oatmeal Cookies. I have officially moved to Colorado! I'm not sure how much baking is going to be happening in the first couple weeks of being up here, but I do have a yummy cookie recipe to share that I made a couple weeks ago. I actually made two different types of Nutella cookies in order to use up an old jar and make way for a new one, but these cookies were so much better than the others that I won't even waste your time with the other recipe. Oatmeal always makes the best cookies! Ingredients:1/2 cup unsalted butter, softened1/2 cup sugar1/2 cup brown sugar1/2 cup Nutella1 egg2 tsp vanilla1 cup flour1 cup quick cooking oats1 tsp baking soda1/4 tsp salt Preheat oven to 350°F.

Cream the butter, sugar, and brown sugar together with an electric mixer. Scoop out dough using a small ice cream scoop and bake for 7 minutes. Oatmeal Chocolate Chip "Crack" Cookies. I love getting tried and true recipes from people because I know they will always be fantastic, and I was lucky enough to get a delicious cookies recipe from my friend, Nell. She says that one of her friends calls these cookies "Crack Cookies", and I can now see why. I think I ate at least 10 of them today. I've never made cookies with pudding before, but I really like the cake-like, moist texture it gives the cookies. Caution: These cookies are dangerous and should only be made if you are willing to eat at least half a dozen per day. (Oh, and I would definitely recommend adding 2 tsp of cinnamon for an added kick. With an electric mixer, cream the butter and sugars. Add in the eggs and vanilla beat until well mixed. Mix in the flour, baking soda, and salt.
