The magnificent High Hats - Baking Fool. Chocolate Molten Cupcake with Powdered Sugar & Strawberries. Death By Oreo Cupcakes. They are probably the best Oreo cakes I have ever tried. A lot of cake's that I have experimented with before are like a vanilla cake with bits of Oreo in them, which didn't really give them enough Oreo flavor. But these were a lot better. I used a dark chocolate fudge cake mix instead of just a regular chocolate cake mix, which went really well with the cookies and gave the cakes just a little more flavor. So, in this recipe there is Oreo's in the cake, in the frosting, and at the bottom is a Oreo surprise. That's right, you put a whole Oreo at the bottom of the cake. The cookie stays firm, which makes it a little interesting to eat against the soft cake, but it actually gave a really yummy crunch.

Preheat oven to 350 degrees. Cream together butter and cream cheese. Foodsnots.com. Peanut Butter and Jelly Cupcakes Recipe. From decadent Peanut Butter Trifles to Amber’s Peanut Butter Snickeroos, I filled up the week with pure peanut butter goodness, so I knew I had to wrap up the week with something extra special. The idea for Peanut Butter and Jelly Cupcakes has been filed away in my recipe notebook for months just waiting to debut in spectacular style. I have forever been a fan of peanut butter and jelly sandwiches, especially when fluffy white bread is involved. I know, I know, this is certainly not the most nutritious bread choice, but hey, this is My Baking Addiction, so I am giving the white bread some love to go along with this week’s peanut butter love.

I get on food kicks a lot, meaning I’ll eat the same thing over and over again until I simply can’t stand the thought of it, but somehow, I never tire of PB&J sandwiches and I often eat them for dinner when Brian works late… sometimes I even get fancy and actually toast the bread! If you enjoyed this recipe, you may like... Coconut Cupcakes. Well, I made it through my first week back to work. And let me tell ya, hanging out in a second floor classroom while the temps soared to the mid-nineties had me begging for fall temperatures or a rather large air conditioning unit.

Much like my students, I get cranky when I’m hot, so the thought of turning on the oven after work was not happening. In fact, I really didn’t do much baking or cooking at all last week – I just kind of adjusted to being awake at ridiculous o’clock and also got caught up on episodes of Big Brother. Stop judging me! It’s become a little bit of a guilty pleasure and I kinda think Frank is adorable. I’m also obsessed with watching him dodge bullet after bullet.

Since I slacked all week, I decided to use my time wisely this weekend and whipped up a last couple of summery desserts. After a quick scan of the fridge and pantry, I realized that not only did I not bake last week, but I was also lacking in the whole grocery shopping department. Cherry Coke Float Cupcakes with Chocolate Shell. Vanilla Latte Cupcakes. Since gaining a reputation for being “the cupcake lady” (or whatever you want to call me), I rarely make cupcakes without a purpose. Usually they are for someone’s birthday, graduation, or even the occasional wedding, but it’s not often I find myself baking cupcakes just because . However, these vanilla latte cupcakes had been on my list for a long time without anyone requesting them and when I saw a multi-hued container of chocolate-covered espresso beans at The Fresh Market recently, I figured that was reason enough. Despite my former dislike of coffee-flavored things, both desserts and the drink in general, I have made a complete 180 in that regard during my past five years of blogging.

Now coffee-flavored desserts are at the top of my list and I drink one cup of coffee daily. Strawberry Lemonade Cupcakes with Cream Cheese Frosting. Summer is coming and I’m beginning to think of lazy days and lemonade. We just had a horrible Winter Storm last week and although the snow is almost melted now, having a Spring snow storm is down right depressing. I took pictures of the morning after storm and you can see how our property looks after 12 hours of sleet, freezing rain and snow. To boost our moods I decided to make some happy cupcakes. I’ve not made cupcakes in a few weeks and I miss them! What is not happy about a little cake full of sweetness and sunshine! For the Lemonade Cupcakes I adapted my favorite vanilla cupcake recipe from “Small Batch Baking” by Debby Maugans Nakos. 4 tablespoons unsalted butter, at room temperature 1 c. all-purpose flour 1/2 cup buttermilk 1/4 teaspoon baking soda 2 egg yolks, at room temperature 1 tsp pure vanilla extract 3/4 cup plus 1 tablespoons sugar 1/4 teaspoon salt 1 tsp Instant Pink Lemonade Mix (I used Crystal Lite) 4 large strawberries, carefully diced All Rights Reserved©BigBlackDog.

Earl Grey Cupcakes with Lemon Buttercream. I still make my cakes by hand, with a bowl and a good heavy duty fork. I know, I'm a total luddite. But I actually like making cakes and cookies this way, there's something so first-hand about the process. Besides, as I told a friend the other day when he asked why I didn't have a stand mixer; I have to have something left to register for if I ever get married!

Joking aside, I think that making cake by hand gives you a much better understanding of each step of the process: creaming together butter and sugar you can feel when the texture lightens under your finger tips, beating in the eggs one by one (important!) I've gotten into the habit of bringing cupcakes to work fairly often (every other Friday, to be precise) and each time I make them I'm reminded how much I enjoy the process, and also how good homemade cake is. I made a standard back-of-the-box American buttercream because people love the stuff, but to my taste it's a tad too sweet, even with the addition of plenty of lemon. 1.

Caramel Macchiato Cupcakes. It was time to make something special for Winnie’s birthday. Besides that, I kind of owe her. She was one of my first friends in college, possibly the second person I met. We were sitting next to each other in an economics class (theater style seating) when I just fell asleep on her. I had yet to speak to her but I already drooled a bit.

Anyone who will then foster a friendship with the weird girl that just fell asleep on them is surely the sweetest and most forgiving person ever. We’ve been friends for 12 years now. As an added touch, I wanted to make the coffee flavored cake stronger on the bottom, lighter on top, an effect that happens in espresso drinks as the frothy milk is mixed in.
