Loaded Baked Potato Grilled Cheese Sandwich

There was a period in my life when I ate a baked potato almost every day for lunch… I was in college and there was a small food cart called “Spud Brothers” that parked right between the main entrance to the Berkeley campus and Sproul Plaza. (Maybe it’s still there? Their specialty was baked potatoes (in case you didn’t get that from their name) with a wide range of topping offerings. Anyway, the point here is that college was probably the last time I ever ate a baked potato. I still haven’t eaten a baked potato since then, because this is a grilled cheese sandwich. There are, however, potatoes in the sandwich in the form of potato chips. If you want to add sour cream, so it in a thin layer spread on the inside of the bread before piling on the cheese.

When we were little and Mom bought those snack bag chips in the variety “pack” that is so big it’s basically a pallet… …we all always went for those nuclear orange Cheetos first, then Doritos, then the flimsy crisp Lay’s potato chips. Even when there were no other chips left, no other snacks in the entire pantry, no edible food in the entire house, no one would ever touch the Fritos.

Until now. I don’t know what happened to my brain between elementary school and now that suddenly I am all over Fritos. Oh wait, I do know. Frito Pie happened. Frito Pie as an adult happened. I grew up with Frito Pie, a nachos-style Texas mess of Fritos, chili, cheese and carious other toppigs, spending almost all of my pre-middle school life in Texas. Anytime we go on an obsessive compulsive spree like this, you know we’re going to somehow incorporate one of our ATFFs (all-time favorite foods, sorry to get all RaRay acronym on you there)… Nachos. We’ve made breakfast nachos, Irish nachos, chicken skin nachos, and even Oatmeal Nachos (it’s good, we swear). Just a word of warning: this is a very messy sandwich, as nachos are.

Nacho Grilled Cheese Sandwich with Two Cheeses and Guacamole makes 1 sandwich Ingredients Directions Heat grapeseed oil in frying pan over medium low heat. Spread each slice of bread with softened butter. Place the sandwich in the hot pan and cook until bread is toasted brown and cheese has started to melt. Steakhouse Grilled Cheese Sandwich with Caramelized Onions

We wouldn’t normally grill a Porterhouse just to make a sandwich… But in the case of the Steakhouse Grilled Cheese, we just might. The sandwich is inspired by one of our favorite type of restaurants, the American steakhouse. The key to this grilled cheese is the sweet caramelized onions and the funk of a little blue cheese in addition to the regular melty cheese which “glues” the sandwich together.

Steakhouse Grilled Cheese Sandwich with Caramelized Onions makes 1 sandwich Ingredients 2 slices bread 1 tablespoon butter, softened 2 very thin slices mild cheese ¼ cup caramelized onions (recipe below) thinly sliced cooked steak, cut again into strips 1-2 tablespoons crumbled blue cheese fresh cracked black pepper Directions Butter both sides of the bread. Heat olive oil in frying pan over medium heat.
