I'm talking about claim-to-fame level: cheese steaks from Philadelphia, coffee from Seattle, Hatch chiles from New Mexico. These Nanaimo Bars are the ultimate signature food, from beautiful Nanaimo, British Columbia on Vancouver Island in Canada. Nanaimo bars are a rich, decadent, 3-layer, no-bake treat. The bottom crust layer is chocolate, graham cracker crumbs, almonds, and coconut. I'm not sure if this is heresy (Canadian friends? These bars are ubiquitous in Canada. Homemade Caramel (or caramel dip) Yield: about 60 caramels Prep and cook time: 1 hour (not including time to cut and wrap caramels, save extra time for that) Ingredients: 1 cup butter, unsalted 1 cup light corn syrup (11.5 oz) 1 14-oz. can sweetened condensed milk (or substitute two cups half and half or light cream, I almost always use sweetened condensed milk b/c makes for shorter cooking time) 2 1/4 cup brown sugar (14.5 oz.), white sugar is also okay, but I prefer brown 1 tsp. vanilla (Note: if you try any substitute ingredients, I’d love to hear how it goes!

How to make LOLLIESyou will need: jolly ranchers, candy sticks, parchment paper, foil & a cookie sheet 1) lay a piece of foil on cookie sheet. cover foil with a piece of parchment paper.2) unwrap candies and place side by side on parchment paper in your choice of color & flavor combinations. use three candies together for extra large lollies, and only two candies together for regular lollies.3) heat candies in oven for about 5 minutes at 200 degrees. keep a close eye on the candies and take them out as soon as they've barely melted together. if you leave them in too long they will melt too much and you won't be able to put a stick into the lollie. alter the cook time accordingly.4) carefully take cookie sheet out of oven. immediately lay candy sticks into place on melted candies. slowly twirl in melted candy to coat the stick and so it will hold in the lollie. they're hot!
