The four years I spent working in an office could serve as a prime example of how someone should not treat their body. At my craziest, I was working between 50–60 hours a week, and allowing no time in my morning routine to eat breakfast or pack lunch. By 7:00 a.m., I’d be at my desk, mainlining coffee and grumbling out responses to emails as I typed them. Around 10:00 a.m., I’d take a break to chat with coworkers and devour an ungodly amount of cheese and crackers. (My department was never without several boxes of crackers and a block of cheese—a modus operandi I still live by, but practice on a slightly more subdued scale.) Since I began working from home, my eating habits have improved dramatically. I held onto this post for a little while because I was actually considering remaking/rephotographing these for a few reasons.

As long as you stick to a few basics and keep an eagle eye on them while they’re baking, crackers are surprisingly easy to make. This recipe yields crunchy cheddar cheese crackers that are sure to be a hit at your next games night or holiday party. But be forewarned: they’re so tasty they might never make it out of your kitchen! Homebaked Cheese Crackers Makes 8 dozen or more crackers 2 cups of bread flour (best) or all-purpose flour 2 teaspoons sugar 1 teaspoon table salt ¾ teaspoon baking soda 3 Tablespoons canola oil 3 Tablespoons shortening (I use Spectrum non-hydrogenated) 4 ounces sharp cheddar cheese, coarsely shredded ½ cup cold water Extra flour for bench work Salt for topping 2 or 3 heavy cookie sheets, 11” x 17” Make the dough: In the bowl of a stand mixer, combine flour, sugar, salt and baking soda. Cracker mix with cheddar cheese Set a rack in the middle of your oven and preheat to 425°.

And that’s a good thing. Savory, seedy, oniony, and crunchy–a perfect salty snack for someone who’s got a Physical Therapy formal dress to fit into in a few weeks. Plus, baking crackers is just fun because you get to cut them with a pizza cutter or make fun shapes with a cookie cutter. I went with the former. I just love rollin’ out that pizza cutter.
