Until yesterday, I had never created a raw food recipe for kale chips. I couldn’t bring myself to take a veggie that I consider a bit bitter and try to turn it into something yummy. My friend, Joanna kept insisting that they were fab so I decided to give it a whirl. They turned out better than I could have hoped for.
Light and Fluffy I don’t know about you but I’ve always been terrified of making biscuits. There is always so many steps and requirements no matter what recipe you choose…cold butter, floured board, fold the dough but don’t handle it too much, rolling, patting, cutting, resting…yikes, too much room for error for me. So, when we were a wheat (and processed food) eating family I would just pop open one of those cans of ready-to-cook flaky buttermilk biscuits…hard to mess them up unless you forgot to set the oven timer!

This time I was thinking about a guacamole chicken club sandwich, I mean you really cannot go wrong adding cool and creamy guacamole to a chicken club sandwich! Although this sandwich would have been just fine with simply seasoned and grilled chicken, I could not resist the opportunity to add more flavour by marinating the chicken! It is always fun cooking with alcohol and this tequila and lime marinade sure does pack in the flavour! Another way to add flavour is to use a flavoured mayonnaise and the roasted jalapeno mayo that I had recently made fit the bill perfectly. As expected these tequila lime grilled chicken club sandwiches with guacamole and roasted jalapeno mayo are a bit messy but oh so good! Don't worry about the guacamole squirting out the sides or about the roasted jalapeno mayo dribbling down your chin, just sit back and savour every delectable bite of this chicken club sandwich that is anything but boring!
We have had some busy days around here lately! With pea fences and potato planting, seed starting, dog grooming and grandkids. It was time to crank up the crockpot. I use my crockpot so much during gardening season. I just don't always feel like standing on my feet and doing alot of cooking after hours outside working. In my old age or desperation I am getting smarter with how I use my crockpot though.
