We aren’t quite there yet, but it is still time to lighten up our party menus with bright, fresh flavors and cakes. You know, the types of dishes and treats perfect for an upcoming bridal brunch or Mother’s Day tea – less decadent than the ones we crave come fall or deep into winter. Today’s cake makes for the perfect transition from winter to spring with its light sponge cake, sweetened berry filling, and whipped frosting: a Matcha Strawberry Cake! Some of you might be thinking “what the heck is ‘matcha’?” The base of this creation is a genoise cake. Genoise cakes are fairly mild in flavor yet very versatile. Errr.. black friday. i hope you all had an amazing thanksgiving & ate your weight in turkey! Instead of being surrounded by crowds & going black friday shopping this year, i am going to do the complete opposite. i plan to stay in, bake some holiday cookies & binge watch the whole season of the new girlmore girl's revival. i woke up early & already watched the first episode, but i don't want to spoil it! If you plan to do the same as me today, here is the perfect little bite size treats to whip up: mini matcha swirl cheesecakes. i usually only make cheesecake during the holiday's & this year i wanted to make something mini. if you couldn't tell by now, i love making mini versions of things!

Last year my friend from japan came to visit & brought with her a ton of matcha flavoured treats for us to try. matcha is a specially blended green tea powder from japan that is incorporated into various foods, drinks & desserts. while some of the treats i tried were a bit too strong for my liking, the thing i loved most was the green tea kit kat bar. they have SO many unqiue flavours of kit kat available, omg. the combination of the sweet white chocolate & earthy matcha made for the most perfect pairing. well i have yet to come across it again, today's cake is inspired by that green tea kit kat!

A matcha layer cake frosted with a creamy white chocolate buttercream. i was so tempted to add a little green tea powder to the frosting & make it an ombre cake.. maybe next time! I used aiya matcha's cooking grade blend which is specially blended for cooking & baking because it's aromas will come through even when the matcha is mixed with various ingredients! Clues cake: preheat oven to 350. for an 8-inch cake, grease two 8-inch round cake pans and line the bottoms with parchment. for medium or mini cakes, grease a half sheet pan (18" x 13") and line the bottom with parchment. in a large bowl, whisk together all the dry ingredients. in a medium bowl, whisk together all the wet ingredients except for the boiling water. whisk the wet ingredients into the dry ingredients and then stir in the boiling water. it will be a very thin batter. pour into cake pans and bake until a toothpick inserted into the center comes out clean. begin checking for doneness at 20 minutes for a sheet pan and 28 minutes for round cakes. if you're making a round cake, let the cakes cool in the pans for 10 minutes, and then turn the cakes onto a lightly greased cooling rack. make your frosting (below) and decorate as desired.

" and eggboy had one foot out the door on his way to pick up wheat seed. and mumbles the penguin was giving me stuffed animal eye from his seat by the window, while beyond him the sun and the evergreens giggled in my direction. and i was not in hong kong. the worst, right?!
