The white stuff we know as sugar is sucrose, a molecule composed of 12 atoms of carbon, 22 atoms of hydrogen, and 11 atoms of oxygen (C12H22O11). Like all compounds made from these three elements, sugar is a carbohydrate. It’s found naturally in most plants, but especially in sugarcane and sugar beets—hence their names. Sucrose is actually two simpler sugars stuck together: fructose and glucose. In recipes, a little bit of acid (for example, some lemon juice or cream of tartar) will cause sucrose to break down into these two components. If you look closely at dry sugar, you’ll notice it comes in little cubelike shapes. These are sugar crystals, orderly arrangements of sucrose molecules. What happens when you heat a sugar solution?

When you add sugar to water, the sugar crystals dissolve and the sugar goes into solution. The saturation point is different at different temperatures. Supersaturation is an unstable state. I wanted one of these for quite a while as I live in a small flat and do enjoy baking, but hate the inevitable kneading, mixing, etc... Got a food processor to do some of the stuff, but it didn't do this very well so had to get a stand mixer. The mixer arrived on Monday, it was a Warehouse Deal in the truest sense so I scored a proper bargain ~£100ish. When I saw the low price for Used-Like New it was bought immediately as I saved a small fortune on the regular price. So based on the price I would award 5 stars, but in use I find the regular price to be a bit inflated for the quality you get...

I made Cinnabon (cinnamon buns) dough in it and was not that impressed with the machine's ability. Cake batters & icing have been fine. The bowl seems a bit lightweight and for some reason it seems like it needs a coating of some kind. The mixer comes with a liquidiser attachment to use on the back port. The food processor attachment came with 3 blades (discs) and a citrus press. Andrew James 1000 WATT Electric Food Stand Mixer With Splash Guard and 5.5 Litre Bowl + FREE 128 Page Food Mixer Cookbook: Amazon.co.uk: Kitchen & Home. I bought this mixer after much deliberation over Amazon reviews which really seemed, on the whole, to be excellent.

I particularly wanted a splash guard and this has one. It arrived promptly, looked good, was stable on the work top and appeared to have all the tools to kneed, beat and whisk. Just what I thought I needed. So far as I can see the tools are fine, the power of the machine is good but the problem appears to be if you should wish to actually used the attachments and the bowl together - they just dont seemed to have been designed to fit each other. As other reviewers have said, it is indeed very noisy.

I tried bread dough first - most of the flour remained on the side of the bowl and despite further attempts with varying quantities and consistencies it just doesnt want to do the required job. So next I tried to make cakes. I havn't even attempted to make icing. I am persevering with the mixer as I am still living in hope that I shall work out ways to improve results.
