what makes a coffee cake a coffee cake? well, either it’s got coffee in it (this one doesn’t, but looking back, it would be a great idea. however i do have an upcoming recipe that contains coffee – prepare yourselves, it’s amazing), or, it’s just a cake that you eat with coffee, probably with breakfast or brunch. it’s usually spiced with cinnamon (check) and got a sort of streusel (check).

Being a Taurean (stubborn) and A-type (a planner) what bugged me about macarons was how unpredictable they were. On many occasions I have wanted to make them for dinner parties or gifts but given the fact that I never knew if it was going to be a “feet” kinda day, I always chose something else.

Zesty lime juice and cilantro are the key ingredients to creating this light and refreshing salad, no heavy mayonnaise to weigh it down. Made with the freshest ingredients; jumbo shrimp, avocados, tomatoes, red onion, cilantro and chopped jalapeño tossed with some freshly squeezed lime juice and a touch of olive oil. This will be a huge hit at your Cinco de Mayo fiesta or summer bash! Serve this as is for an appetizer, or over lettuce o tostadas for a lunch or light meal. You can easily adapt this to suit your taste by adding more or less cilantro, jalapeño etc.
