How To Make Watermelon and Mango Agua Fresca. I’m still battling it out . Derby or Cinco de Mayo? Bourbon or Tequila? Mint or limes? Okay let’s do both. The mint and the limes, I mean. A common question I get asked is how one can make my margaritas and mojitos into versions that are nonalcoholic. I find agua fresca to be insanely refreshing, which is probably it’s purpose or something. Watermelon juice. !!!! Also, pureeing the heck out of that watermelon brought me back to the summer that I made watermelon soda floats . Why am I not doing that right this instant? Even though Cinco de Mayo is winning today, I’m desperate to have a very large combined Cinco/Derby party. I guess that’s what happens when you bake cookies for someone on another side of a screen. And although I’m showing you two ways to make agua fresca, there really are a bunch of ways. Kiwi is getting a big dose of me later this week too. Anyhoo. It’s gotta be COLD. Perhaps I can give you some financial portfolio advice after this.

You may have noticed that I often recommend doubling (or tripling) recipes and freezing the extra portion for a quick and simple dinner in the future (i.e. work day from hell). I have to admit, it has been really nice to come home from work with nothing more to do than pop a dish in the oven, pour a glass of wine and read a magazine or work on the blog. I figured it's only fair that if I get to take it easy in the kitchen this week, so should you. The frequent reappearance of this dish may have something to do with the fact it is one of Scott's favorites; he calls it "Pizza Chicken.

I started out Monday with perfectly reasonable goals for blogging, my new-ish coaching business, clutter-busting around my office, and exercise. But no sooner had I written down my goals than catching up on House: the last season took priority. Do/did you watch House? I was hooked on the show, and I’m still wondering why. Okay, that’s not true. Anyway, so now that that’s done, I’m here and back on task… it’s summer, and today we’re talking salad. To be honest, I feel a little like the grasshopper who sang all summer. A garden is supposed to take work. Right? Apparently not when you live in Northern California. Yay for lazy! Oh wait. Anyhow, those lazy tomatoes have been costarring all month in this bright and refreshing tomato-watermelon salad. Peach Lemonade Coolers. Last week, my husbands sister and her family visited from Vienna. I knew for a short trip, we would not eat at home much, but I had bought plenty of snacks to have on hand for when we were home. Including a ton of Georgia peaches. I may have overbought just a little, because I still had a handful of peaches left when the house emptied out. I saw a post on The Naptime Chef for Roasted Peach Lemonade. So I just improvised. The next night, I used the last peach and forgot to peel it first.

Peach Lemonade Coolersinspired by The Naptime Chef 2 medium sized, ripe peaches, peeled, halved and pitted 1/2 cup lemonade 1 ounce vodka of choice.
