There’s a thing in my house that when you have ripe ol bananas either you make banana bread or banana fritters. These delicious tasty treats can be eaten morning, noon, or night, as a snack or as dessert. These fritters are so easy to make and will satisfy any craving you may have. So if you have a few of these bananas lying around your hose… don’t toss them, put them to GREAT use! Enjoy! Peel and mash the ripe bananas. http://www.thatssoyummy.com/recipes/jamaican-banana-fritters/

Red Velvet Crêpes

http://duhlicious.com/2011/03/red-velvet-crepes/ I rolled my eyes at the red velvet cake trend, but now I can’t get enough. I’ll make any excuse to have ‘cake’ for breakfast– here’s my take on a classic. Red Velvet Crepes (Makes about 24, 8″ crepes) Ingredients: – 1 1/2 cups all-purpose flour - 1 teaspoon baking powder - 1/2 teaspoon baking soda - 1/4 teaspoon salt - 3 tablespoons sugar - 2 cups butter milk - 1 1/4 cup whole or lowfat milk - 1 large egg - 1 teaspoon vanilla extract - 1 1/2 tablespoons cocoa powder, sifted - 1 tablespoon red food color gel - 2 tablespoons unsalted butter, melted + 2 tablespoons cooking oil (for pan) *Update : Because the buttermilk lends to the acidity of this batter, do not substitute the baking soda for extra baking powder. If you add more baking powder, and omit the baking soda, you’ll end up with a heavy and dense crepe.

i decided this year i would make all my christmas presents. i managed to convince my family this was a good idea. so i set out planning the perfect baked good for each member of my family. some were easy and some not so easy. my brother, Jeff, is engaged to Miranda. i love her - she is fun, outgoing and just an all around incredible person. the only problem is she is a pickier than me - which believe me is hard to do. but i figured i couldn't go too wrong with baking. Miranda is a teacher and i figured it would be cool if i did some sort of a breakfast baked good that she could grab on her way to school. i was totally sold on my buttermilk berry muffins. i have yet to meet anyone that didn't like those - but i called my brother just incase. yea - she doesn't like muffins. he told me she likes raspberry white chocolate scones. http://www.pickycook.com/breakfastandbrunch/raspberrywhitechocolatescones.aspx
If you ever want me to like you, just make me a light, fluffy stack of pancakes. I’ll blush, I’ll smile a lot, I might propose–it’ll be weird and cute. Promise. Just when I thought pancakes couldn’t get any better, I stumbled upon this recipe by Tasty Kitchen member frecklesandsunshine . The title: When French Toast Met Pancakes…and Fell In Love totally made me giddy with butterflies in my stomach. I was in love way before the batch was whipped up. http://tastykitchen.com/blog/2011/08/when-french-toast-met-pancakes/

I swear buttermilk is magic. I’ve dwelled on this before. Buttermilk seems to turn everything to gold. Super-moist, super-delicious gold. Anyway, I needed a simple, summery, breakfasty, cake-like-but-not-dessert-like recipe to make this morning.
http://www.heathersdish.com/1/baked-eggs-with-bacon-and-spinach/ Do y’all remember the scene in Runaway Bride (that’s an Oscar contender if I’ve ever seen one…) where Julia Roberts realizes that she doesn’t know how she likes her eggs? You know, because she’s always turning herself into the girl that the guy she’s marrying wants to be with? Yeah. That’s not me. I know how I like my eggs, although I will say that it depends on the day.
