Eggs Baked in Roasted Tomatoes | Hungry Healthy Happy. With tomato season nearly gone, I won’t be eating many whole tomatoes for a while as there is not much worse than an out of season tomato. They just don’t taste of anything. So, to hang onto the last of the season by a thread, I thought I would incorporate tomatoes into today’s breakfast. I love the flavour combination of eggs and tomato, and I used to combine the two by having eggs covered in ketchup a few years ago. To get the same flavour combination without all the salt and sugar that comes with ketchup (yes, even the low salt and sugar one is packed with it – I will be posting a home-made recipe soon though), bake the egg in a tomato.

Healthier Chocolate Cake | Hungry Healthy Happy. Well, here it is, finally – a healthier chocolate cake. I could eat chocolate cake until it comes out of my ears, but sadly that would do nothing for my health.

I have been experimenting for a while to try and get the measurements right in a basic chocolate sponge, but replacing some of the ingredients for healthier ones. What makes it healthier, is that it uses wholewheat flour, instead of white, dates instead of caster sugar and it replaces half the butter for yoghurt and banana. It is also topped with a healthier alternative to butter cream, but tastes nearly exactly the same, but a little more tart as it is Greek yoghurt.

Plus, the fruit in the middle means it is part of your 5-a-day! The small changes save a lot of fat and fruit sugar is always going to be better for you. 1 good sized slice of this chocolate cake has just 210 calories in it. For the butter cream, if you don’t like the taste of Greek yoghurt, then you can use puréed avocado instead.
