Buffalo Chicken Grilled Cheese Sandwich

After the success of turning jalapeño poppers into grilled cheese sandwiches (aka the jalapeño popper grilled cheese sandwich ) I was wondering what other dishes I could turn into grilled cheese sandwiches. The basic idea is to take all of the flavours of a food that I am already totally into and use them in a grilled cheese sandwich. It did not take me too long to think of something perfect and it is interesting that it is also classic bar food, buffalo chicken wings, which are also one of my favourites. Buffalo chicken wings are chicken wings that are tossed in a spicy hot sauce and they are commonly served with a side of carrot and celery sticks with a blue cheese dip. I knew exactly where I was going to start with the buffalo chicken grilled cheese sandwich and that was with a quick buffalo chicken salad. I made the buffalo chicken salad by mixing shredded chicken with some mayo, carrots, celery, red onion and and a healthy dose of hot sauce.

I will admit that I have neglected to use my fancy panini press lately because it’s in the far deep corner of my bottom kitchen cabinet – I always forget that it is there.

So many people ask me if they need a panini maker to make a good panini and the answer is no. I usually make it in a fry pan with some butter and a heavy lid or something to compress it while it cooks. One of my favorite paninis is the classic mozzarella-pesto version on rustic bread.

Our friends over at IMUSA sent us their panini press to try out and challenged us to make a panini sandwich Muy Bueno style. http://www.letsdishrecipes.com/2011/08/caprese-panini.html#.UVcmhdF-P0M Filed under Vegetarian Ingredients 8 slices of foccacia bread or other flatbread, split (or 4 crusty rolls) 2 large tomatoes, sliced 8 slices fresh mozzarella 1/2 cup fresh basil leaves 1-2 tablespoon olive oil 1-2 tablespoons balsamic vinegar Salt and pepper, to taste Directions Drizzle bread slices with olive oil. On four slices, place equal amounts of sliced tomato, sliced mozzarella and basil. Drizzle with balsamic vinegar and season with salt and pepper, to taste. Top with remaining bread slices to form a sandwich. Grill sandwiches in a panini press (or in between two frying pans) until bread is golden and cheese is melted.
