Baked Ginger Sesame Boxing Chicken. I load up some chicken wings when they were on sale two weeks ago. Instead of the usual grilling I tried making Boxing Chicken. Boxing Chicken is a common finger food served at cocktail parties or get together in Malaysia. It is basically chicken wings with the meat pushed off the bone up to the end to form a ‘boxing glove’ look…thus the name. This is my version of the chicken dish. Instead of deep frying it, I baked them in the oven. Ingredients: From My Kitchen Snippets 12-14 chicken drummettes Marinate: 2 tbsp grated ginger 2 cloves garlic – finely chopped 1 tsp sesame oil 2 tbsp soy sauce 1 tbsp oyster sauce 1/2 tsp crushed pepper flakes 1/4 tsp black pepper 1 tbsp brown sugar salt to taste Some toasted sesame seeds 1. FIVE SPICE CHICKEN.
This is my version of Chinese fried chicken. It is one of those dishes that are so simple to make yet so delicious. It has no flour nor breading so the skin is all toasted and crisp while the meat is succulent and flavourful. We all love fried chicken and this one has a very different flavour from our usual chicken. Garlic, ginger and five spice seasons the parboiling liquid for the chicken. Pre-cooking in a flavoured liquid not only speeds up the cooking process but also makes the chicken absorb all the seasonings. I prefer roasting because, although the skin doesn't crisp, it intensifies the flavour of the meat and caramelizes the seasonings on the skin. Karahi Chicken. As we pulled up to the new market, we had no idea what to expect. The trip was just long enough that the kids fell asleep in the back of the car. There were the usual signs of a Grand Opening - colorful, triangle flags strung across the front of the store... hustle and bustle in the parking lot. There was a young Indian woman dressed in a Sari offering customers cool cups of tea... My husband and I decided (in the interest of letting sleeping babes lay) I would run into the store to scope it out, while he hung back with the kids. I opened the car door and with a great sense of excitement (curbed only by my own conscience not to get too worked up in case of immense disappointment) ... I entered the market... Ten minutes later....I approached the window to my husband's side of the car, "wake those little ones up, THIS you need to see...
" There were aisles and aisles of foreign vegetables, spices, nuts, flours, chutneys, Basmati rice and cookware. For the Karahi curry sauce: For the chicken: Buffalo Chicken Wontons. We to joke in grad school that the way to get a bunch of grad students to attend anything was to offer free food. It didn't really matter what it was - pizza, sandwiches, popcorn . . . the leftover half-eaten cookies from last week's seminar - anything would really work. I actually don't remember starving when I was in school, but I still got in the mentality that free food = good. Now that I'm in the work world, I've broken myself of that habit, mostly because I've learned that in many cases, free food = "food someone else doesn't want.
"(Unless, of course, you work with my sister. In that case free food = "a dessert recipe she wanted to try and now wants to share the calories with you. " Lucky you.) I've become much more picky about eating something just because it was free. I got geekily excited, however, when I was leaving work one evening and I spied this on one of the tables: Side note: Doesn't that note just crack you up? They are bags full of fresh oregano, sage and tarragon. 1. 2.
