Coconut Cashew Cookies. Servings: 20 Preparation Time: 15 minutes 1 1/2 cups raw cashews 1 cup unsweetened shredded coconut1/3 – 1/2 cup granulated sweetener1/4 teaspoon vanilla beans, about 2 beans 1/4 teaspoon baking soda 1/4 scant teaspoon salt1/4 cup virgin coconut oil, melted 2 tablespoons full fat coconut milk* Preheat oven to 350 degrees F. Place the cashews and coconut in a food processor and pulse until a coarse sand texture is created. Add the sweetener, vanilla beans, salt and soda and pulse until combined. Add in the oil and coconut milk and pulse again to form a dough. Using a cookie scoop or spoon, place balls of dough on a parchment cookie sheet and press down slightly on each dough ball. Place an additional cookie sheet under the other sheet to prevent the bottoms of the cookies from browning too much.
Bake at 350 for 8-10 minutes, until slightly brown. Remove from the oven and let the cookies sit on the cookie sheet for 5 minutes to set then place them on a cooling rack to get crisp. Long a tradition in Lutheran church gatherings of Scandinavian-Americans in the Midwest, egg coffee is a light, clear brew with absolutely no bitterness or acidity. Prep Time: 20 minutes Total Time: 20 minutes Ingredients: 9 cups water (to boil) plus 1 1/4 cold water3/4 cup freshly ground coffee (medium to coarse grind)1 egg Preparation: Bring 9 cups of water to a rapid boil in a saucepan or enamel coffee pot. Meanwhile, stir together ground coffee, 1/4 cup water, and 1 egg (Note: diehard egg coffee lovers use the crushed eggshell as well, but it works fine to leave this out). When water is boiling, carefully pour in the egg-coffee mixture, turning down the heat if necessary to prevent it from boiling over. After 3 minutes of boiling, immediately remove pot from heat and pour in 1 cup cold water.
Pour through a fine-meshed sieve or strainer into cups and serve. Yield: 10 cups coffee.
