Pumpkin Cheesecake Brownies | The Floating Kitchen. I am apparently devoid of all creativity when it comes to pumpkin recipes. History would suggest that the only thing I can think to do with pumpkin is mix it with cream cheese in some form or another. Evidence here and here. And this recipe today. Maybe it’s because pumpkin just isn’t really my thang. I don’t know. But even though pumpkin isn’t the love of my life, chocolate and I have been in a romantic relationship for many years. What am I saying right now!!! OK, let’s get back on track. Brownies with a pumpkin-cream cheese swirl.

I think I’m going to end here before any more weirdness comes out of my brain. How nice it would be to see into the future, know what’s on the horizon, and act accordingly. I’m usually one of those people that never wants to know the future. I don’t want to know if I’m going to get a speeding ticket next week, much less know about significantly more important life events before they happen.

However, I often wish I could have known when I was going to lose my dad and my grandma. My dad was sick from leukemia complications for awhile, but up until the end he had a good prognosis. My grandma, although she was 91, was in good health, so it was a shock when she passed in her sleep on a random Sunday night. In retrospect (hindsight is always 20/20, isn’t it?)

I can’t ever remember a time before ambrosia salad. Actually, it’s possible when you’re talking about an Italian lady who felt that the best way to show people you love them is to feed them. I’ve always been known as a messy person. If you walked into my place right now, there are at least a few piles of stuff – on the table, on the floor, on the counter. Don’t even think about going into my bedroom because I have piles of books and props everywhere.

And even though it looks like I would never find anything, I’m actually an organized mess. I know which items are in which piles. I’m also a mess in the kitchen. The counters constantly need to be wiped down from the crumbs, frosting smears, and drops of spilled milk. Cutting brownies has never been my specialty either, like these messy Chocolate Covered Strawberry Brownies. I got the idea for these brownies one day at work. I wanted these strawberry brownies to be simple – bake my favorite one-pot brownie recipe, slice strawberries to go on top, then pour melted chocolate over that and chill. Preheat oven to 350 degrees. You will need: 1 cup sugar1 cup flour2 tsp baking powdera dash of salt3/4 cup milk1 stick of melted butterbrown sugarcinnamon1 can diced peaches I had a difficult time finding diced peaches… I literally went to 3 different stores in search of diced peaches… and then I remembered something… I own a knife!

So, to begin… I used a a regular cupcake tin and a mini muffin tin. Put 1 tsp of melted butter into each regular size muffin tin. Now make your batter. Put 2 tbsp of batter into each regular size muffin tin… on top of the melted butter. Then put 1 tbsp diced peaches on top of the batter. (Just 1 little diced peach per mini muffin tin) Ingredients.
