Pumpkin Peanut Butter Oatmeal Bars

It’s a match made in thick, gooey heaven. I’ve been eating these bars like there’s no tomorrow. Or like there’s no pumpkin shortage. Did you know about that? But there’s no shortage of full-on pumpkin flavor in these. Between the homemade pumpkin spice lattes and these bars, I’ve been converted to the other side the pumpkin side. These were so easy to make. No need to slave away on these bars. For me, cooking and baking should be fun and not a chore, and I highly doubt you’ll find these bars to be a chore.

I love it when I don’t dirty every dish in the house and don’t have a total mess going on. The good thing about the peanut butter pumpkin bars is that your kitchen won’t look like a cyclone hit it when you’re done. I’m writing from New York, where I’m taking comfort in good restaurants, good friends, and good reading for a week. I’ll be sharing some of those foods with you, of course, and some of my activities. This recipe was inspired by the latest segment of the Kathy Gena show, which ought to air next week. The nut butter I chose to use in this recipe is actually a seed butter–sunflower seed butter from Maranatha, which my friend Kathleen gave to me as a housewarming gift (thanks Kathleen!). The base is a mix of quick oats, sunflower seeds, raisins, and carob chips. Best of all, this recipe doubles very easily as a granola. If you’re interested in some of the controversy over oils in plant based diets (a little? A lot? None at all?) It’s worth scrolling through the comments. A lot of you also commented to say that it’s nice that my Mom and I have such a good rapport when it comes to talking about healthy eating. So, how do we inspire change in others’ eating habits? By setting an example. On saturday, my Mom asked me what I thought of her new snack bars from Kashi. I asked to take a peek at the ingredient label. But then I took a peek at the ingredients in the bar: Whey protein (a milk derivative), numerous processed soy byproducts, several common allergens, no Omega-3 fatty acids, and tons of Omega-6 fatty acids, to say nothing of the fact that there are 33 ingredients in just one of these tiny bars?

To make a long story short? In the end, her faves were Larabars (hip hip hooray!) Xo. Baked Oatmeal Snack Bars. If you’re in need of portable whole grains, these are perfect.

They are the flavor of good nutrition! Baked Oatmeal Snack BarsIngredients1.5 cups rolled oats1/2 cup chopped walnuts [or any nuts you like]1/2 cup dried fruit (any you like – raisins, cranberries, dates, figs)1/4 cup seeds (any you like – sunflower, pumpkin, flax, sesame)1 tsp cinnamon1 tsp kosher salt1.25 cups skim milk1 egg1 tsp vanillaMethod:Preheat oven to 350*Mix dry ingredients.Mix wet ingredients.Pour wet into dry. Stir to combine.Pour into a 9×9 baking dish either coated in cooking spray or lined with parchment.Bake for 40 minutes.Cut into 9 squares.Makes 9 servings . Each bar is appx. 170 calories, 3 grams fiber and 5 grams protein. [Cut into 12 squares reduces calories to about 125 calories per square]While delicious, the only sweetness in these comes from the dried fruit.
