Last week I realized I was either going to need to eat the remaining 5 pounds I had still to get through that hadn’t been processed to freeze or eaten fresh or baked into muffins. I knew I needed to get them taken care of before I left later this week, so a smoothie-ing they must go.My kids love smoothies, and they love taking them for lunches as well. We round it out with vegetables and hummus and a few cheese squares, and they have a fantastic lunch that hardly takes any time to put together because we’re just tossing in our peach freezer smoothies that we made earlier. I recently shared 5 tree-nut and peanut-free lunches over on Babble that you can send with your kids to school, and I’ve been showing a sampling of our different school lunches over on the Food for My Family Facebook page.

I could never eat all the veggies in a day that I’m suppose to so instead I’ve figured out a way to get around that. I drink them! The idea of green smoothies first came to me after reading many blogs on the subject.

Last week the boys and I changed up our usual breakfast routine. We’re pretty boring when it comes to the first meal of the day. It’s peanut butter/jelly toast or oatmeal most days of the week and our usual pancakes on Saturday. So, in hopes of shaking things up a bit, I pulled out the blender and decided to make smoothies.

In the past I’ve stayed away from making them, primarily because I couldn’t get a good combination of flavor and thickness without the addition of a banana. My kids are not banana fans. After experimenting with a few recipes and combinations of our own we landed on the recipe below. Adapted from Whole Living *makes three 8 ounce servings 1/2 cup frozen blueberries 1/2 cup frozen strawberries 3/4 vanilla yogurt (dairy or non-dairy) 1/2 cup freshly squeezed orange juice, about 3 oranges 2 tablespoons ground flaxseed Combine all ingredients in a blender and blend on medium speed until smooth.
