Author Notes: My husband and I love to go to The Vanderbilt in Prospect Heights, Brooklyn, on a weeknight, sit at the bar, which faces the open kitchen, and order a bunch of appetizers and nibbles. Nibbles are a Vanderbilt specialty. There's great homemade beef jerky and pickles, and blistered shishito peppers with dipping salt, but the undisputed star -- which we order every time we go -- is the fried Brussels sprouts.
The sprouts arrive in a towering pile; the leaves are pulled apart and fried, with the sweet hearts tossed into the oil and cooked just to the point of tenderness. The crisp shards are then painted with a mix of sriracha, honey and lime juice, making the sprouts tangy, hot and sweet all at once. In an attempt to replicate these at home, I painstakingly peeled a pound of sprouts and got frying.
Happily, I discovered that if you're willing to deal with a little hot oil, you can do a pretty good job of replicating these guys at home. Serves 2 to 4. Eggplant Chips with Cilantro Pesto. This years Summer Fest is kicking off with a celebration of all things Eggplant and I couldn’t be more excited! My love for eggplant start a few years ago with Eggplant Parmesan, I mean really, who doesn’t love anything smothered with mozzarella cheese?
And has since grown into an absolute obsession with all things eggplant! Strolling through the Santa Monica’s farmers market one can see how many different kinds of eggplant there are! White Eggplant, Baby Eggplant, the stripy purple and white eggplant called Rosa Bianca… and my personal favorite, the Japanese Eggplant. This past weekend I picked up a few slender Japanese Eggplants from the farmers market and decided to make Eggplant Chips! I then brushed them with a paprika and garlic infused olive oil, and baked these for about 30 minutes until they were just slightly crisp but not yet burnt. Yes, of course I love the dough. But if I had to choose my FAVORITE part, absolute favorite, it’s the cheese that gets slightly browned and bubbly.
Yep, that’s the best part of the pizza to me. This pizza tastes like the brown bubbly cheese on pizza. I say that because I was slightly skeptical about trying a cauliflower crust pizza. In the end, this is delicious! Like I said, it tastes like the browned cheese on a pizza, smells like pizza, but no, it’s doesn’t taste 100% like pizza.
The key is to bake the crust separately before you add the toppings. Why make a pizza without the dough? 1. 2. Try this, but don’t expect a REAL pizza, expect a healthy version of it. Cut the polenta into 1/2 inch thick slices and place them on the baking sheet. Spread a generous tablespoon of marinara sauce onto each polenta slice. The sweet kernels bursting with crisp starchy juice, the little bits of charred skin, and the deep smokey flavor tastes of summer memories I long to relive.
Grilled corn is the perfect platform on which to experiment with flavors. Who says you have to stick with plain old butter? Grilled Corn with Smokey Lime Mayo is a new favorite in our family. Grilling corn isn’t tricky, but it does seem to be something many people are afraid to try. How to Grill Corn: Don’t worry about under-cooking. For Grilled Corn with Smokey Lime Mayo: Mix the mayonnaise, lime zest and juice, honey, salt and hot smoked paprika in a bowl. Place the corn on the cob on the grill with the husks hanging off and cook for 2 minutes. As you can see, I'm still on a bit of a Mexican foodkick around here, although truthfully this idea that popped into my mind for Seven Layer Tostadas is far from authentically Mexican!
But it does have Mexican flavors going on, with a crisped whole wheat tortilla topped with my family's version of what makes up the seven layers in seven layer dip: refried beans, guacamole, sour cream with a touch of Taco Seasoning stirred in, finely grated cheese, diced tomatoes, green onions, and sliced black olives. Did you count to see if there really were seven layers? When I looked online to see how other people make seven layer dip, I found quite a few recipes that had jalapenos as one of the layers, but in my family we never use those. We also have a few picky people in the family (ahem!) So we often have one end of the dip that has no guacamole or olives.
